  • Filet with a Merlot Sauce Recipe

    Ingredients

    1 (750 milliliter) bottle Merlot wine
    2 (14.5 ounce) cans low-sodium chicken broth
    1 (14.5 ounce) can beef broth

    2 tablespoons unsalted butter, softened
    1 tablespoon all-purpose flour
    1 tablespoon olive oil
    6 (6 ounce) fillets beef tenderloin
    freshly ground black pepper to taste
    1/4 cup chopped shallots
    1 tablespoon chopped garlic
    1 teaspoon fresh thyme

    Directions

    In a heavy sauce pan over high heat, combine wine, chicken broth and beef broth. Bring to a boil, and cook until mixture is reduced to 2 cups, about an hour. (This can be prepared a day ahead – cover and refrigerate).

    In a small bowl, mix butter and flour. Heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle steaks with salt and pepper, and saute until medium-rare, about 4 minutes per side. Transfer steaks to a plate.

    Stir shallots, garlic and thyme into skillet. Add 2 cups reduced wine mixture to skillet. Bring mixture to a boil, scraping up any browned bits. Whisk in butter mixture until smooth. Boil sauce until thick enough to coat a spoon, about 2 to 3 minutes.

  • Sausage, Peppers, Onions, and Potato Bake

    Ingredients

    2 teaspoons olive oil
    2 pounds Italian sausage links, cut into 2-inch pieces
    1/4 cup olive oil
    4 large potatoes, peeled and thickly sliced
    2 large green bell peppers, seeded and cut into wedges
    2 large red bell peppers, seeded and cut into wedges
    3 large onions, cut into wedges
    1/2 cup white wine
    1/2 cup chicken stock
    1 teaspoon Italian seasoning
    salt and pepper to taste

    Directions

    Preheat oven to 400 degrees F (200 degrees C).

    Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish. Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil. Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.

    Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

  • Maple-Poppy Seed Dressing

    Ingredients

    2 cups mayonnaise
    1/4 cup real maple syrup
    2 tablespoons red wine vinegar
    2 tablespoons white sugar
    1 tablespoon poppy seeds

    Directions

    Whisk together mayonnaise, maple syrup, vinegar, sugar, and poppy seeds in a bowl until blended.

  • Recipe For Turkey Bean Bake

    Ingredients

    1 pound ground turkey
    1 large onion, chopped
    2 garlic cloves, minced
    1 (16 ounce) can baked beans
    1 (16 ounce) can kidney beans, rinsed and drained
    1 (15 ounce) can black beans, rinsed and drained
    1/2 cup ketchup
    2 tablespoons brown sugar
    2 tablespoons molasses
    1 tablespoon red wine vinegar or cider vinegar
    1 teaspoon prepared mustard
    1/4 teaspoon pepper

    Directions

    In a large skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350 degrees F for 25-30 minutes or until bubbly.
