  • How To Make Deviled Chicken Breasts

    Ingredients

    1/8 cup Italian-style dried bread crumbs
    4 skinless, boneless chicken breasts
    1 tablespoon olive oil
    1/2 cup dry white wine
    1/2 teaspoon ground savory
    1/4 teaspoon salt
    1 (4.5 ounce) can sliced mushrooms
    1 tablespoon lemon juice
    1 tablespoon honey mustard

    Directions

    Place breadcrumbs in a large, resealable plastic bag. Add chicken, seal bag, and shake to coat chicken with breadcrumbs.

    Heat oil in a large, nonstick skillet over medium heat. Add chicken. Cook 3 minutes on each side, or until browned. Add wine, savory, salt, and mushrooms to the chicken. Cover, and reduce heat. Simmer for 15 minutes, or until chicken is done. Remove chicken and mushrooms with slotted spoon, and place on serving plate.

    Add lemon juice and mustard to skillet, and stir well. Heat through. Serve sauce with chicken.

  • Penne with Spicy Chicken Sausage, Beans, and Greens Recipe

    Ingredients

    8 ounces penne pasta
    4 links spicy chicken andouille sausage
    2 tablespoons olive oil
    3 cloves garlic, crushed
    1/3 cup pesto
    1/2 cup white wine
    1 (15 ounce) can cannellini beans, undrained
    3 cups torn arugula leaves
    1 pint grape tomatoes, halved
    salt and freshly ground black pepper to taste
    4 ounces crumbled goat cheese

    Directions

    Bring a large pot of lightly salted water to a boil. Place penne in the pot, cook for 8 to 10 minutes, until al dente, and drain.

    In a skillet over medium heat, cook the sausage until evenly brown. Cool and slice.

    Heat the oil in a large pot over medium heat, and cook the garlic 1 minute, until lightly browned. Mix in sausage, pesto, and white wine. Cook and stir until heated through. Mix in beans with liquid and arugula, and cook until arugula is wilted. Stir in the tomatoes, and cook until heated through. Toss with pasta, season with salt and pepper, and top with goat cheese to serve.

  • Recipe For Duck Breasts with Raspberry Sauce

    Ingredients

    4 duck breast halves
    2 teaspoons sea salt
    2 teaspoons ground cinnamon
    4 teaspoons demerara sugar
    1/2 cup red wine
    1/4 cup creme de cassis liqueur
    1 teaspoon cornstarch
    4 ounces raspberries

    Directions

    Preheat oven on broiler setting. Use a fork to score the duck breasts through the skin and fat but not all the way through to the meat.

    Heat a large heavy skillet on medium high. Fry the duck breasts skin side down, until the skin browns and fat runs out, about 10 minutes. Remove the breasts from the pan, and pour off most of the fat. Return breasts to pan, and fry skin side up for another 10 minutes. Remove breasts from pan, and allow to rest on a baking sheet. Mix the sea salt, cinnamon and Demerara sugar together and sprinkle over the skin of the duck breasts. Pour most of the fat out of the frying pan.

    Mix together the red wine, cassis, and cornstarch in a small bowl. Pour into the pan, and simmer for 3 minutes, stirring constantly, until the sauce is thickened. Add raspberries, and simmer for another minute until heated through.

    Broil the duck breasts skin side up, until the sugar begins to caramelize, about 1 minute. Slice the duck breasts thinly, pour a little sauce over the top, and serve warm.

  • Recipe For Tasty Tortellinis

    Ingredients

    20 ounces cheese tortellini
    1/3 cup red wine vinegar
    3/4 cup olive oil
    1 1/2 tablespoons prepared Dijon-style mustard
    2 cloves garlic, minced
    2 tablespoons chopped fresh basil
    2 tablespoons chopped fresh parsley
    4 green onions, thinly sliced
    salt to taste
    ground black pepper to taste
    1 cup black olives
    6 tablespoons grated Parmesan cheese

    Directions

    Cook tortellini according to package directions–al dente.

    While tortellini is cooking, prepare marinade. Combine vinegar, mustard, garlic, basil, chopped parsley, onions, and salt and pepper to taste.

    Drain tortellini and rinse in cold water. Pour marinade over tortellini, add olives (and optional ingredients, see above) and refrigerate. When ready to serve, add Parmesan and some fresh parsley for garnish, if desired. Serve with toothpicks.
