  • Recipe For Sweet Carrots

    Ingredients

    1 1/2 cups baby carrots
    2 teaspoons brown sugar
    1 teaspoon butter or stick margarine
    1 teaspoon white wine vinegar or cider vinegar
    1/8 teaspoon salt
    1 teaspoon minced chives

    Directions

    Place carrots in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 5-8 minutes or until tender. Transfer carrots to a bowl. Add the brown sugar, butter, vinegar and salt; toss until butter is melted and carrots are coated. Sprinkle with chives.

  • Recipe For Chilled Peach Soup

    Ingredients

    1 cup dry white wine
    1 cup peach schnapps
    1/2 cup sugar
    1 teaspoon chopped fresh mint leaves
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    2 cups half-and-half cream
    10 fresh peaches, sliced

    Directions

    Place white wine, peach schnapps, sugar, mint leaves, cinnamon, nutmeg, and half-and-half together in a bowl, and stir until well blended and sugar is dissolved. Add sliced peaches, and transfer to a saucepan.

    Cook over medium heat for 15 minutes, stirring frequently and reducing heat if necessary to prevent scorching cream. Remove from heat when peaches are tender. Cool to a safe temperature for blending. Process in a blender or food processor until completely smooth. Cover, and refrigerate until ready to serve. Serve chilled.

  • Orange and Onion Salad

    Ingredients

    6 large oranges
    3 tablespoons red wine vinegar
    6 tablespoons olive oil
    1 teaspoon dried oregano
    1 red onion, thinly sliced
    1 cup black olives
    1/4 cup chopped fresh chives
    ground black pepper to taste

    Directions

    Peel the oranges and cut each one into 4 or 5 crosswise slices. Transfer them to a shallow serving dish and sprinkle them with the vinegar, olive oil, and oregano. Toss gently, cover, and refrigerate for 30 minutes.

    Toss the oranges again, arrange the sliced onion and black olives over them decoratively, sprinkle with chives and grind on fresh pepper.

  • Salmon-Wrapped Asparagus Recipe

    Ingredients

    2 pounds fresh asparagus, trimmed
    1 1/2 pounds salmon fillets
    1 1/2 cups water
    1/2 cup dry white wine or chicken broth
    1 tablespoon minced green onion
    1 tablespoon minced chives
    1 teaspoon salt
    1/2 teaspoon whole black peppercorns
    MUSHROOM SAUCE:
    1/2 pound fresh mushrooms, sliced
    1/2 cup sliced green onions
    2 tablespoons butter or stick margarine
    1 teaspoon olive or canola oil
    2 tablespoons all-purpose flour
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 cup 2% milk
    1 tablespoon minced chives

    Directions

    In a large skillet, bring 1/2 in. of water to a boil; add asparagus spears. Reduce heat; cover and simmer for 2 minutes. Drain and immediately place asparagus in ice water; drain and pat dry. Cut salmon widthwise into 1/4-in.-thick slices. To form one bundle, place three to four slices cut side down, overlapping edges slightly; wrap around five to six asparagus spears. Secure with toothpicks. Repeat for remaining bundles.

    In a large skillet, bring 1-1/2 cups water, wine or broth, onion, chives, salt and peppercorns to a boil. Using a spatula, carefully add bundles. Reduce heat; cover and simmer for 7-8 minutes or until fish flakes easily with a fork.

    Meanwhile, for sauce, in a skillet, saute mushrooms and green onions in butter and oil until tender. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chives. Serve over bundles.
