  • Standard Greek Salad Recipe

    Ingredients

    5 cucumbers, sliced
    5 large tomatoes, coarsely chopped
    1/2 red onion, chopped
    1 (4 ounce) package feta cheese, crumbled
    1 (2.25 ounce) can pitted green olives, chopped
    1/4 cup red wine vinegar

    Directions

    In a large bowl, toss together cucumbers, tomatoes, red onion, feta cheese, and green olives. Sprinkle with red wine vinegar. Refrigerate until serving.

  • Recipe For Broccoli-Walnut Soup

    Ingredients

    1 tablespoon olive oil
    2 cloves garlic, minced
    1 onion, chopped
    1 cup white wine
    1 quart almond milk
    2 teaspoons vegetarian chicken-flavored bouillon granules
    1 small head broccoli, chopped
    1/2 cup coarsely chopped walnuts
    1 tablespoon honey
    2 tablespoons soy sauce
    2 tablespoons cornstarch
    1/4 cup cold water
    3 tablespoons toasted sesame seeds

    Directions

    Heat the olive oil in a large saucepan over medium heat, stir in the garlic and onion, and cook until the onion has softened and turned translucent, about 5 minutes. Pour in the wine, and bring to a simmer over medium-high heat. Cook for 3 minutes, then add the almond milk, and return to a simmer.

    Once the almond milk is simmering, stir in the bouillon and broccoli. Cook until the broccoli is very tender, about 10 minutes. Stir in the walnuts, honey, and soy sauce. Dissolve the cornstarch in the water, then stir into the simmering soup until thickened. Serve sprinkled with sesame seeds.

  • Recipe For Crispy Orange Beef

    Ingredients

    1 1/2 pounds beef top sirloin, thinly sliced
    1/3 cup white sugar
    1/3 cup rice wine vinegar
    2 tablespoons frozen orange juice concentrate
    1 teaspoon salt
    1 tablespoon soy sauce
    1 cup long grain rice
    2 cups water
    1/4 cup cornstarch
    2 teaspoons orange zest
    3 tablespoons grated fresh ginger
    1 1/2 tablespoons minced garlic
    8 broccoli florets, lightly steamed or blanched
    2 cups oil for frying

    Directions

    Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.

    Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary.

    Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.

    Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

  • Okanagan Peach Soup Recipe

    Ingredients

    4 cloves garlic
    1 tablespoon olive oil
    2 1/4 cups fresh peaches – peeled, pitted and chopped
    1/2 cup diced onion
    1 tablespoon curry powder
    1/8 teaspoon ground turmeric
    1/4 cup packed brown sugar
    1/4 cup Chardonnay wine
    1 cup vegetable broth or stock
    1/2 cup coconut milk
    salt and ground black pepper to taste

    Directions

    Preheat oven to 275 degrees F. (135 degrees C). Roast garlic cloves on a baking sheet for about 30 minutes, or until golden but not burnt.

    Heat the oil in a medium saucepan over medium heat, sweat the onions and peaches until softened. Season with curry powder, turmeric, roasted garlic, and sugar. Cook over medium to low heat until caramelized, about 30 minutes. Deglaze the pan with Chardonnay wine, then stir in the vegetable stock.

    Remove from heat, and puree the soup in a blender or food processor, and strain through a fine sieve. Stir in the coconut milk, and season with salt and pepper. Reheat if desired, before serving.
