  • Recipe For Cajun Shrimp Orecchiette

    Ingredients

    2 cups uncooked orecchiette pasta
    1/3 cup butter
    1/2 cup chopped shallots
    3 cloves garlic, chopped
    1/4 cup chopped green onion
    1 1/2 teaspoons Cajun seasoning, or to taste
    1 teaspoon cracked black pepper
    1 cup white wine
    1 cup diced plum tomatoes
    1 pound medium shrimp – peeled and deveined
    1 cup baby spinach

    Directions

    Bring a large pot of lightly salted water to a boil. Add orecchiette pasta, and cook for 9 to 11 minutes, until almost al dente; drain.

    Melt butter in a medium skillet over medium heat. Stir in shallots, garlic, and green onion. Season with Cajun seasoning and pepper, and cook about 2 minutes. Mix in wine, tomatoes, and shrimp. Continue to cook and stir until shrimp are opaque. Mix in the pasta and spinach, cover, and simmer 3 to 5 minutes, until pasta is al dente and spinach has wilted.

  • Recipe For Greek Tomato Salad

    Ingredients

    1/4 cup red wine vinegar or cider vinegar
    2 tablespoons olive oil
    1 garlic clove, minced
    1/2 teaspoon dried oregano
    1/4 teaspoon dried basil
    1/8 teaspoon sugar
    1/8 teaspoon salt
    1/8 teaspoon pepper
    1 cup thinly sliced red onion, separated into rings
    1/2 cup coarsely chopped green pepper
    4 tomatoes, cut into 8 wedges
    6 pitted ripe olives, halved
    3 tablespoons crumbled feta cheese

    Directions

    In a bowl, whisk together the vinegar, oil, oregano, basil, sugar, salt and pepper. Add red onion and green pepper; toss to coat. Stir in tomatoes, olives and cheese. Cover and refrigerate for at least 1 hour. Serve with a slotted spoon.

  • True Love Chicken

    Ingredients

    10 bulbs garlic, cloves separated and peeled
    8 skinless, boneless chicken breast halves
    1 tablespoon olive oil
    1 tablespoon white wine
    1 pinch ground black pepper
    1 onion, chopped
    1 teaspoon olive oil
    2 tablespoons butter
    2 (14.5 ounce) cans diced tomatoes
    1 tablespoon chopped fresh rosemary
    1 (8 ounce) package spinach tagliatelle pasta

    Directions

    Preheat oven to 180 degrees F (81 degrees C).

    Peel the garlic and crush to release juices. In a large skillet, sear the chicken in 1 tablespoon olive oil and white wine. Place all of the garlic in a lightly greased 9×13 inch baking dish and place chicken on top. Sprinkle a dash of ground black pepper over the top. Cover and bake in the preheated oven for 30 to 45 minutes, until the juices run clear.

    In a medium skillet saute the onion in 1 teaspoon of olive oil and butter/margarine, until it is soft and golden. Add the tomatoes and your favorite fresh herbs to taste. Stir together and remove from heat.

    To Make Pasta: Cook pasta in a large pot of salted boiling water about 8 to 10 minutes, until it is al dente. Drain and place pasta on a long, very shallow serving dish. Pour tomato sauce over it, then place baked garlic chicken pieces on top with some or all of the garlic. Serve.

  • How To Make Southern California Cioppino

    Ingredients

    1/4 cup olive oil
    1 onion, chopped
    4 stalks celery, chopped, with leaves
    4 carrots, sliced
    4 potatoes, peeled and cubed
    1 tablespoon minced garlic
    1/4 cup chopped parsley
    2 tablespoons chopped fresh cilantro
    1 (28 ounce) can crushed tomatoes
    2 cups tomato juice
    2 (8 ounce) jars clam juice
    1/2 cup white wine
    2 teaspoons dried basil
    1 1/2 teaspoons dried oregano
    1 tablespoon dried thyme
    3/4 teaspoon chili powder
    1/8 teaspoon cayenne pepper
    salt and pepper to taste
    1 pound halibut steaks, cubed
    1 pound medium shrimp – peeled and deveined
    1 pound mussels, cleaned and debearded
    2 pounds clams in shell, scrubbed
    1 pound cooked crabmeat
    1 pound bay or sea scallops, rinsed and drained

    Directions

    Heat the oil in a large stockpot over medium heat. Stir in the onion, celery, carrots, potatoes, and garlic, and cook 5 to 10 minutes. Add parsley, cilantro, tomatoes, tomato juice, clam juice, white wine, basil, oregano, thyme, chili powder, cayenne pepper, salt and black pepper. Reduce heat and simmer for 2 hours.

    Approximately 15 to 20 minutes before you are ready to serve the cioppino, stir in the fish, shrimp, mussels, clams, crab, and scallops. Continue to cook and stir approximately 5 minutes, or until the shrimp are pink and the clams and mussel shells have opened. Remove any unopened mussels or clams before serving.
