  • Recipe For Honey-Mustard Salad Dressing

    Ingredients

    1 cup fat-free plain yogurt
    1/3 cup reduced-fat mayonnaise
    1/3 cup honey
    1/4 cup Dijon mustard
    2 tablespoons prepared mustard
    4 1/2 tablespoons white wine vinegar or cider vinegar

    Directions

    In a bowl, whisk together all ingredients. Refrigerate for at least 1 hour before serving.

  • Lemon Lentil Salad

    Ingredients

    5 tablespoons olive oil, divided
    1 tablespoon lemon juice
    2 teaspoons red wine vinegar
    2 teaspoons sugar
    1 teaspoon Dijon mustard
    1/2 teaspoon dried thyme
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 garlic clove, minced
    3 cups water
    1 cup dried lentils, rinsed
    1 bay leaf
    1 large tomato, diced
    1/2 cup minced fresh parsley
    2 green onions, sliced

    Directions

    In a small bowl, combine 4 tablespoons oil, lemon juice, vinegar, sugar, mustard, thyme, salt, pepper and garlic; set aside.

    In a medium saucepan, bring the water, lentils, bay leaf and remaining oil to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Remove from the heat. Let stand for 30 minutes; drain if necessary. Discard bay leaf. Add the tomato, parsley, onions and dressing; mix gently. Cover and refrigerate for at least 2 hours.

    Ingredients

    2 tablespoons olive oil
    1 onion, chopped
    1 whole head garlic, peeled and chopped
    2 cups sliced fresh mushrooms
    1/2 cup chopped fresh basil leaves, or to taste
    1 (28 ounce) can whole peeled tomatoes
    1 (15 ounce) can tomato sauce
    1 (6 ounce) can tomato paste
    3/4 cup Merlot wine
    2 teaspoons salt
    1 teaspoon ground black pepper
    2 teaspoons dried oregano
    1/4 cup white sugar

    Directions

    Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.

    Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.

    Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

    Ingredients

    1 1/2 cups fresh broccoli florets
    1/2 cup fresh cauliflowerets
    1/2 cup sliced carrots
    1/4 cup water
    1 cup cubed cooked chicken
    6 cherry tomatoes, halved
    DRESSING:
    2/3 cup vegetable oil
    1/3 cup red wine vinegar
    2 teaspoons honey
    1 teaspoon minced fresh basil
    1/2 teaspoon salt
    1/4 teaspoon pepper

    Directions

    In a large covered saucepan, steam broccoli, cauliflower and carrots in water for 2-3 minutes; drain. Place in a bowl; add chicken and tomatoes. Combine dressing ingredients; pour over salad. Cover and chill for at least 4 hours, stirring occasionally. Drain before serving.
