  • Italian-Style Quinoa-Stuffed Sole

    Ingredients

    1/4 cup quinoa
    1/2 cup water
    1 tablespoon chopped fresh parsley
    1 tablespoon chopped fresh basil
    1 teaspoon lemon zest
    4 (2 ounce) sole fillets
    2 tablespoons grated Parmesan cheese
    4 lemon slices
    ground black pepper
    2 tablespoons red wine vinegar
    1/2 cup water

    Directions

    Stir together the quinoa, 1/2 cup water, parsley, basil, and lemon zest in a small saucepan over high heat. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the quinoa is tender, about 20 minutes. Pour into a mixing bowl, fold in the Parmesan cheese, and allow the mixture to cool.

    Preheat the oven’s broiler and set the oven rack at about 6 inches from the heat source. Lightly grease a small baking dish.

    Spoon a quarter of the quinoa mixture onto one end of each sole fillet. Fold the other side of the sole overtop, sprinkle with black pepper, and place a lemon slice on top. Place the sole into the prepared baking dish, and add the vinegar and remaining water.

    Broil in the preheated oven until the sole flakes easily with a fork, and the flesh is opaque, 3 to 4 minutes.

  • Recipe For Tropical Salad with Pineapple Vinaigrette

    Ingredients

    6 slices bacon
    1/4 cup pineapple juice
    3 tablespoons red wine vinegar
    1/4 cup olive oil
    freshly ground black pepper to taste
    salt to taste
    1 (10 ounce) package chopped romaine lettuce
    1 cup diced fresh pineapple
    1/2 cup chopped and toasted macadamia nuts
    3 green onions, chopped
    1/4 cup flaked coconut, toasted

    Directions

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

    In a cruet or jar with a lid, combine pineapple juice, red wine vinegar, oil, pepper and salt. Cover and shake well.

    In a large bowl, toss together the lettuce, pineapple, macadamia nuts, green onions and bacon. Pour dressing over salad and toss to coat. Garnish with toasted coconut.

  • Cabbage-Tomato Pasta Toss

    Ingredients

    2 medium tomatoes, peeled and diced
    2 tablespoons red wine vinegar
    1 teaspoon dried basil
    1/2 cup minced fresh parsley
    8 ounces bow tie pasta, uncooked
    2 cups shredded cabbage
    1 1/2 cups soft bread crumbs
    1/2 cup slivered almonds
    2 cloves garlic cloves, minced
    1/4 cup olive oil
    1/4 cup butter

    Directions

    In a bowl, combine the tomatoes, vinegar, basil and parsley; set aside. Cook pasta according to package directions, adding the cabbage during the last 2 minutes.

    Meanwhile, in a skillet, saute bread crumbs, almonds and garlic in oil and butter for 6 minutes or until golden brown.

    Drain pasta and cabbage; place in a large bowl. Add tomato and crumb mixtures; toss and serve immediately.

  • How To Make Savory Tomato Bread Pudding

    Ingredients

    1/4 cup raisins
    1/4 cup white Zinfandel wine
    3 tablespoons brown sugar
    2 (14.5 ounce) cans diced tomatoes, drained
    1 teaspoon Worcestershire sauce
    3 tablespoons chopped fresh basil leaves
    1 pinch cayenne pepper
    1/4 cup butter
    1 (1 pound) loaf day-old bread, cubed
    1 cup shredded Monterey Jack cheese

    Directions

    Preheat the oven to 400 degrees F (200 degrees C). Grease a 9×13 inch baking dish, or one of similar size.

    In a small saucepan, combine the raisins, wine, brown sugar, tomatoes, Worcestershire sauce, basil and cayenne pepper. Simmer over medium-low heat for 10 minutes.

    In a large skillet, melt butter. Toss the bread cubes in the butter to coat, then toss with Monterey Jack cheese, and transfer to the prepared baking dish. Pour the tomato mixture over the bread.

    Bake for 25 to 30 minutes in the preheated oven, or until the top is nicely toasted.
