  • Recipe For Steaks with Crab Sauce

    Ingredients

    1 teaspoon dried rosemary, crushed
    1/2 teaspoon salt
    1/2 teaspoon pepper
    4 (8 ounce) beef strip steaks
    1 tablespoon vegetable oil
    SAUCE:
    2 teaspoons cornstarch
    1/4 cup white wine or chicken broth
    3/4 cup heavy whipping cream
    1 tablespoon Dijon mustard
    1/2 teaspoon prepared horseradish
    1/8 teaspoon salt
    1/8 teaspoon pepper
    1 (8 ounce) package imitation crabmeat, chopped

    Directions

    Combine the rosemary, salt and pepper; rub over steaks. In a large skillet over medium-high heat, cook steaks in oil for 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F)

    Meanwhile, in a small saucepan, combine the cornstarch and wine or broth until smooth. Stir in the cream, mustard, horseradish, salt and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in crab; heat through. Serve over steaks.

  • How To Make Kir

    Ingredients

    3/4 cup white wine
    4 teaspoons creme de cassis liqueur

    Directions

    Pour wine and creme de cassis into a wine glass. Mix and serve.

  • Lamb for Lovers

    Ingredients

    2 tablespoons olive oil
    2 (7 bone) racks of lamb, trimmed, fat reserved
    salt and pepper to taste
    4 cloves garlic, minced
    1 large onion, diced
    4 carrots, diced
    1 cup celery tops
    1 cup port wine
    1 cup red wine
    1 (14.5 ounce) can low-sodium chicken broth
    5 sprigs fresh spearmint
    3 sprigs fresh rosemary
    1 cup mint apple jelly
    2 tablespoons olive oil
    salt and pepper to taste
    1 tablespoon garlic, minced
    1/4 cup panko bread crumbs
    2 tablespoons olive oil
    4 sprigs fresh mint

    Directions

    To Make Demi-Glace: Heat 2 tablespoons olive oil in a medium skillet over medium heat, and add trimmings from lamb. Season with salt and pepper. Brown the fat, reduce heat, and add 4 cloves minced garlic, onion, carrots, celery leaves, port, red wine, and chicken broth. Transfer the mixture to a slow cooker, and simmer on Low 8 hours, or overnight.

    Strain the slow cooker mixture into a saucepan over medium-low heat. Mix in the spearmint, rosemary, and mint jelly, and simmer, adding more port, wine, or broth as needed, until mixture leaves a syrup-like coating on the back of a spoon. Strain once more, and keep warm while lamb roasts.

    To Roast Lamb: Place a cast iron or oven-proof skillet in the oven, and preheat to 450 degrees F (230 degrees C). Rub lamb with 2 tablespoons olive oil, salt, pepper, and garlic. Coat with panko bread crumbs.

    Carefully remove the heated skillet from the oven, warm 2 tablespoons olive oil in the skillet, and sear lamb on both sides. Return the skillet with the lamb to the preheated oven, and continue cooking 5 to 10 minutes, to an internal temperature of 145 degrees F (63 degrees C).

    Pour a small amount of the demi-glace on platter and arrange lamb criss-crossed. Drizzle with more demi-glace, and garnish with fresh mint to serve.

  • How To Make Insalata Cotta e Cruda

    Ingredients

    2 artichokes, uncooked and trimmed to the heart
    2 bulbs fennel, trimmed and quartered
    2 carrots
    1 baking potato
    1/2 head romaine lettuce
    1 medium head Belgian endive
    1 medium tomato
    2 ounces fontina cheese
    4 tablespoons olive oil
    2 tablespoons red wine vinegar
    1 teaspoon Dijon-style prepared mustard
    1 to taste salt and pepper

    Directions

    Cook the artichoke hearts, fennel, and carrots in salted boiling water until tender but firm, about 8 minutes. Drain. When cool, cut the artichoke hearts and fennel into thin wedges. Cut the carrots on the diagonal into thin slices. Boil the potato in water to cover until tender but firm. Drain, and when cool enough to handle, peel and cut into medium dice.

    Cut the romaine into thin strips crosswise. Cut the endive into thin strips lengthwise. Core the tomato, and cut into medium dice.

    Trim the rind from the fontina, and cut cheese into small matchsticks.

    Mound the lettuces in a shallow bowl, and sprinkle with the tomato. Arrange the vegetables over the top. Sprinkle with the fontina.

    In a small bowl combine the olive oil, vinegar, and mustard. Salt and pepper to taste. Beat lightly with a fork. Drizzle the dressing over the salad, and toss.
