  • How To Make Autumn Pork Roast

    Ingredients

    2 1/2 pounds boneless pork loin
    1 teaspoon garlic powder
    salt and pepper to taste
    2 tablespoons olive oil
    1/2 cup dry white wine
    2 cups cubed butternut squash
    1 large onion, sliced
    1/2 cup applesauce
    1 tablespoon Dijon mustard
    1 tablespoon soy sauce
    1/2 cup brown sugar
    1/2 teaspoon ground cinnamon

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Season the pork loin with garlic powder, salt, and pepper. Heat olive oil in a large oven-proof skillet or Dutch oven over medium-high heat. Brown the pork loin on all sides in the hot oil, about 10 minutes total. Remove the pork loin from the pan, and set aside. Pour in the white wine, and bring to a simmer, stirring to dissolve the caramelized bits in the pan.

    Scatter the butternut squash and onion in the skillet and place the browned pork loin on top so they work as a roasting rack. Stir together the applesauce, mustard, soy sauce, sugar, and cinnamon. Pour over the pork loin, then cover the pan with a lid or a double layer of aluminum foil.

    Bake pork loin in preheated oven until it has reached an internal temperature of 160 degrees F (70 degrees C), about 1 hour. Allow to rest for 10 minutes before serving

  • Prime Rib Au Jus with Yorkshire Pudding Recipe

    Ingredients

    1 (5 pound) bone-in beef rib roast
    8 cloves garlic, quartered
    3/4 teaspoon salt
    1 teaspoon freshly ground black pepper

    2 cups eggs
    2 cups milk
    1 pinch salt
    2 cups all-purpose flour
    1/2 cup pan drippings from prime rib

    1/2 cup white wine
    2 cups beef stock

    Directions

    Place the roast bone-side down in a roasting pan, and use a sharp paring knife to poke 24 small holes 1 inch deep all over the roast. Stuff each hole with a sliver of garlic. Sprinkle with 3/4 teaspoon salt, and LOTS of black pepper. Allow the roast to stand at room temperature for 2 hours. This will take the chill off and allow the meat to cook more evenly.

    Meanwhile, beat together the eggs and milk with a pinch of salt until smooth. Stir in flour until smooth. Cover the Yorkshire pudding batter, and place in the refrigerator.

    Preheat oven to 450 degrees F (230 degrees C).

    Cook the roast in the preheated oven for 30 minutes, then lower the heat to 350 degrees F (175 degrees C), and continue roasting until a meat thermometer inserted in the center of the meat reaches 140 degrees F (60 degrees C), about 1 hour.

    When the roast is done, remove it from the roasting pan, cover with aluminum foil, and let rest in a warm spot while you make the Yorkshire pudding. Measure out 1/2 cup of the beef fat, and divide among 12 muffin tins; pour off the remaining fat, but save the roasting pan to make the jus.

    Place the grease-filled muffin tins into the oven, and turn the temperature up to 425 degrees F (220 degrees C). Let the muffin tins preheat for 10 minutes, then fill 3/4 full with the refrigerated batter, and return to the oven. Bake 20 to 25 minutes until the puddings have risen tall and are golden brown.

    While the Yorkshire puddings are baking, place the roasting pan on the stove over medium-high heat. Stir in the wine, and bring to a simmer while scraping to dissolve the pan drippings;

  • Homemade Tomato Sauce I

    Ingredients

    10 ripe tomatoes
    2 tablespoons olive oil
    2 tablespoons butter
    1 onion, chopped
    1 green bell pepper, chopped
    2 carrots, chopped
    4 cloves garlic, minced
    1/4 cup chopped fresh basil
    1/4 teaspoon Italian seasoning
    1/4 cup Burgundy wine
    1 bay leaf
    2 stalks celery
    2 tablespoons tomato paste

    Directions

    Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.

    In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

  • Recipe For Skillet Herbed Chicken with Mustard

    Ingredients

    3 tablespoons Dijon mustard
    2 tablespoons honey
    2 tablespoons dried tarragon
    2 teaspoons dried basil
    2 teaspoons dried thyme
    1/8 teaspoon salt
    1/8 teaspoon freshly ground black pepper
    2 tablespoons vegetable oil
    4 boneless, skinless chicken breast halves
    1 cup white wine

    Directions

    In a small bowl, blend Dijon mustard and honey. Mix in the tarragon, basil, thyme, salt, and pepper.

    Heat oil in a large skillet over medium heat. Place chicken in the skillet, and brush on both sides with the Dijon mustard mixture. Pour 1/4 cup wine around the chicken. Reduce heat, cover, and simmer about 10 minutes, until liquid is reduced.

    Pour another 1/4 cup wine around the chicken, and continue to cook about 5 minutes, until chicken is no longer pink and juices run clear. Remove from heat, reserving remaining liquid.

    Mix remaining wine into the skillet. Increase heat to medium, and scrape up browned bits. Cook and stir until liquid is reduced by about 1/3. Serve as a sauce over the chicken.
