  • Recipe For Beef Marinade I

    Ingredients

    1 1/2 cups vegetable oil
    3/4 cup soy sauce
    1/2 cup white wine vinegar
    1/3 cup lemon juice
    1/4 cup Worcestershire sauce
    2 tablespoons ground dry mustard
    2 1/4 teaspoons salt
    1 tablespoon ground black pepper
    1 1/2 tablespoons chopped fresh parsley
    2 tablespoons ground cloves

    Directions

    In a quart jar, combine oil, soy sauce, vinegar, lemon juice and Worcestershire sauce. Season with mustard, salt, pepper, parsley and ground cloves. Shake well until it is mixed.

    Put meat in a large bowl. Pour marinade over meat and let stand covered 3 days in refrigerator, basting every day.

  • Green Beans With Shallot Dressing Recipe

    Ingredients

    1 slice bacon
    1/2 pound thin French green beans (haricots verts)
    3 tablespoons extra-virgin olive oil
    2 teaspoons Dijon-style mustard
    2 teaspoons white wine vinegar
    1 teaspoon bacon drippings
    1 tablespoon minced shallot

    Directions

    Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slice on a paper towel-lined plate. Let cool and crumble bacon. Reserve 1 teaspoon of bacon drippings.

    Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the green beans, recover, and steam until just tender, 3 minutes.

    Whisk together olive oil, Dijon-style mustard, vinegar, bacon drippings, and shallot in a bowl. Toss hot, steamed green beans in a bowl with the dressing and crumbled bacon, and serve.

  • Sweet Potato and Brandy Soup Recipe

    Ingredients

    3 large sweet potatoes
    1/2 cup chopped Vidalia onion
    1 tablespoon olive oil
    2 tablespoons white wine
    1/4 cup red wine
    1 tablespoon brandy
    2 cubes chicken bouillon
    2 cups water
    1/2 tablespoon allspice
    salt and pepper to taste

    Directions

    Bring a large pot of water to a boil. Add sweet potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel, and mash. Set aside.

    In a medium skillet over medium high heat, cook and stir onions in olive oil until translucent. Add white wine, red wine, and brandy, and simmer for 5 minutes. Add mashed sweet potatoes, stirring to incorporate. Dissolve bouillon cubes in water and add to the soup with the allspice. Simmer another 10 minutes, stirring occasionally. Season to taste with salt and pepper. Serve hot.

  • Meatless Stuffed Peppers Recipe

    Ingredients

    2 tablespoons vegetable oil
    1 large onion, chopped
    3 cloves garlic, chopped, divided
    4 tablespoons uncooked white rice
    1 cup vegetable broth
    1 pound firm tofu, crumbled
    1/4 cup chopped fresh parsley
    1 cup chopped fresh mushrooms
    2 eggs
    1/4 cup dry bread crumbs
    1 cup finely chopped walnuts
    1 tablespoon vegetarian Worcestershire sauce
    1 tablespoon soy sauce
    1 tablespoon paprika
    6 green bell peppers
    1 (8 ounce) can crushed tomatoes
    1/4 cup wine
    1 tablespoon tomato paste

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Heat oil in a medium skillet over medium heat. Saute onions and 2 cloves of garlic until onions are translucent. Add rice and saute 2 minutes. Stir in vegetable broth, cover and cook until rice is done, about 15 minutes.

    Meanwhile, in a large bowl combine tofu, parsley, mushrooms, eggs, bread crumbs, walnuts, Worcestershire, soy sauce, paprika, and cooked rice.

    Slice the tops off of the peppers; save tops. Core peppers and stuff with tofu mixture. Replace tops on peppers.

    In a shallow baking dish combine tomatoes, wine, tomato paste and remaining garlic. Place peppers in dish and cover.

    Bake in preheated oven for 1 hour.
