  • Roast Duck Legs With Red Wine Sauce Recipe

    Ingredients

    1 bunch chopped fresh rosemary
    4 large garlic cloves
    4 duck legs
    salt to taste
    1 teaspoon Chinese five-spice powder
    1 1/2 cups red wine
    1 1/2 tablespoons red currant jelly

    Directions

    Preheat an oven to 375 degrees F (190 degrees C). Spread the rosemary sprigs and garlic cloves into a 9×13-inch baking dish.

    Place the duck legs on top of the rosemary, and sprinkle with salt and five-spice powder. Bake in the preheated oven for 1 hour. Meanwhile, bring the wine to a boil in a small saucepan over medium-high heat. Stir in the currant jelly until dissolved. Reduce heat to medium-low, and simmer 5 minutes; set aside.

    After the duck has cooked 1 hour, pour off and discard the fat that has accumulated in the baking dish. Pour the wine sauce over the duck legs, and bake 15 minutes more until the duck is very tender and the sauce has thickened slightly.

  • Hearty Lentil Soup

    Ingredients

    2 tablespoons vegetable oil
    1 bunch green onions, chopped
    1 leek, sliced
    1 carrot, diced
    1 parsnip, scrubbed and diced
    1 potato, peeled and diced
    1 stalk celery, sliced
    1 cup dry lentils, rinsed
    1 (14.5 ounce) can diced tomatoes
    3 cups vegetable stock
    2 bay leaves
    1 dash soy sauce
    2 teaspoons vegetarian Worcestershire sauce
    1/2 cup red wine
    1 bunch fresh cilantro, chopped

    Directions

    Heat the oil in a large saucepan and mix in the onions, carrot, parsnip, celery, potato, and leek. Stir over a medium heat.

    Place lentils, tomatoes, stock, bay leaves, a splash of the soy and Worcestershire sauces and wine in the saucepan. Stir and bring the mixture to a boil. Cover and simmer for 25 to 30 minutes, or until the lentils are cooked.

    Remove the bay leaves from the soup. Stir in the cilantro and serve.

  • Trishie’s Chinese-Style Salad Dressing Recipe

    Ingredients

    1/2 cup red wine vinegar
    11 tablespoons extra-virgin olive oil
    1 tablespoon hoisin sauce
    1 tablespoon honey
    1/4 teaspoon minced garlic
    salt and ground black pepper to taste

    Directions

    Whisk the red wine vinegar, olive oil, hoisin sauce, honey, garlic, salt, and pepper together in a bowl. Store in refrigerator. Shake well before use.

  • Recipe For Traditional Osso Buco

    Ingredients

    2 pounds veal shanks, cut into short lengths
    1/4 cup all-purpose flour
    1/4 cup Butter
    2 cloves garlic, crushed
    1 large onion, chopped
    1 large carrot, chopped
    2/3 cup dry white wine
    2/3 cup beef stock
    1 (14.5 ounce) can diced tomatoes
    salt and pepper to taste

    1/2 cup chopped fresh parsley
    1 clove garlic, minced
    2 teaspoons grated lemon zest

    Directions

    Dust the veal shanks lightly with flour. Melt the butter in a large skillet over medium to medium-high heat. Add the veal, and cook until browned on the outside. Remove to a bowl, and keep warm. Add two cloves of crushed garlic and onion to the skillet; cook and stir until onion is tender. Return the veal to the pan and mix in the carrot and wine. Simmer for 10 minutes.

    Pour in the tomatoes and beef stock, and season with salt and pepper. Cover, and simmer over low heat for 1 1/2 hours, basting the veal every 15 minutes or so. The meat should be tender, but not falling off the bone.

    In a small bowl, mix together the parsley, 1 clove of garlic and lemon zest. Mix into the veal just before serving.
