  • Chicken Saltimbocca Recipe

    Ingredients

    4 skinless, boneless chicken breast halves
    4 slices thinly sliced prosciutto
    1/3 cup butter
    1 cup white wine
    4 slices provolone cheese

    Directions

    Place 1 ham slice over each chicken breast and fasten with toothpicks. Melt butter in a medium skillet over medium high heat and fry chicken for 5 to 7 minutes, or until almost cooked through (juices run clear).

    Pour wine over chicken and allow to evaporate; place 1 cheese slice over each chicken breast and cover skillet. Cook until cheese has melted, about 5 minutes.

  • Orange and Onion Salad Recipe

    Ingredients

    6 large oranges
    3 tablespoons red wine vinegar
    6 tablespoons olive oil
    1 teaspoon dried oregano
    1 red onion, thinly sliced
    1 cup black olives
    1/4 cup chopped fresh chives
    ground black pepper to taste

    Directions

    Peel the oranges and cut each one into 4 or 5 crosswise slices. Transfer them to a shallow serving dish and sprinkle them with the vinegar, olive oil, and oregano. Toss gently, cover, and refrigerate for 30 minutes.

    Toss the oranges again, arrange the sliced onion and black olives over them decoratively, sprinkle with chives and grind on fresh pepper.

    Ingredients

    5 egg yolks
    1/2 cup white sugar
    6 tablespoons Marsala wine

    Directions

    In top of a double boiler over simmering water, mix together egg yolks and sugar until smooth. Stir in Marsala wine. Continue to cook and stir constantly until mixture thickens and bubbles start to form. Remove from heat and serve immediately.

  • How To Make Majorcan Style Brains

    Ingredients

    1 pound calves’ brains
    1/4 cup all-purpose flour
    salt and pepper to taste
    1 tablespoon olive oil
    1 onion, chopped
    1 tablespoon red wine vinegar
    1 1/4 cups chicken stock
    2 egg yolks
    2/3 cup heavy whipping cream

    Directions

    Remove skin and any nasty-looking pieces from calves’ brains. Rinse in cold running water and pat dry with paper towels. Sprinkle with flour and season with salt and pepper to taste.

    In a large skillet, heat oil over medium high heat. Add onion and saute until translucent. Add seasoned brains and brown slightly all over. Add vinegar and stock, reduce heat to low and let all simmer, covered, for 30 minutes.

    Remove brains from skillet. Slice them and place slices in a 9×13 inch baking dish. Cook skillet juices rapidly to reduce. Meanwhile, preheat oven to 375 degrees F (190 degrees C).

    Strain skillet liquid. In a small bowl beat egg yolks and mix will with the cream. Whisk mixture into skillet sauce. Pour sauce over brains and heat through in the preheated oven for 10 to 15 minutes.
