  • Recipe For Pork Medallions with Dijon Sauce

    Ingredients

    1 (1 pound) pork tenderloin
    1/3 cup all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 tablespoon butter
    3 green onions
    1/3 cup white wine or chicken broth
    1/2 cup fat-free evaporated milk
    4 teaspoons Dijon mustard

    Directions

    Cut pork widthwise into 6 pieces; flatten to 1/4-in. thickness. In a large resealable plastic bag, combine the flour, salt and pepper. Add pork, a few pieces at a time, and shake to coat. In a large nonstick skillet, brown pork in butter over medium-high heat. Remove and keep warm.

    Slice green onions, separating the white and green portions; reserve green portion for garnish. In the same skillet, saute the white portion of green onions for 1 minute. Add wine or broth. Bring to a boil; cook until liquid is reduced to about 2 tablespoons. Add milk. Reduce heat; simmer, uncovered, for 1-2 minutes or until slightly thickened. Whisk in mustard. Serve pork with Dijon sauce. Garnish with reserved green onions.

  • Shiitake Angel Hair Pasta

    Ingredients

    6 ounces angel hair pasta
    6 ounces fresh sliced shiitake mushrooms
    1 clove garlic, minced
    1/2 onion, chopped
    1/4 cup white wine
    1 tablespoon olive oil
    1/4 cup chicken broth
    1/2 cup heavy whipping cream
    salt to taste
    ground black pepper to taste
    2 tablespoons grated Parmesan cheese
    2 tablespoons chopped fresh parsley

    Directions

    Saute garlic and onion in olive oil over medium heat; add mushrooms as the aroma develops. Add chicken stock and wine, and cook until mixture is reduced to 1/2 volume. Blend in cream, and reduce to desired thickness. Season with salt and pepper to taste.

    Meanwhile cook pasta in a large pot of boiling salted water until al dente.

    Drain pasta, and toss with sauce until coated. Serve on small warmed plates, topped with grated Parmesan cheese and parsley.

  • How To Make Antipasto Salad

    Ingredients

    6 cups torn lettuce leaves
    8 ounces hard salami, julienned
    6 ounces provolone cheese, julienned
    1 cup shredded mozzarella cheese
    2 medium tomatoes, chopped
    1 (6 ounce) can pitted ripe olives , drained, halved
    1 tablespoon minced chives
    1 (8 ounce) can tomato sauce
    1/2 cup vegetable oil
    1/4 cup red wine vinegar or cider vinegar
    1 teaspoon sugar
    1 teaspoon salt
    1 teaspoon dried oregano
    1/2 teaspoon garlic powder
    1/4 teaspoon pepper

    Directions

    Place the lettuce on a large serving platter. Arrange the salami, cheeses, tomatoes and olives over top. Sprinkle with chives. In a blender, combine the remaining ingredients; cover and process until smooth. Drizzle over salad.

  • Recipe For Sesame Seared Tuna

    Ingredients

    1/4 cup soy sauce
    1 tablespoon mirin (Japanese sweet wine)
    1 tablespoon honey
    2 tablespoons sesame oil
    1 tablespoon rice wine vinegar
    4 (6 ounce) tuna steaks
    1/2 cup sesame seeds
    wasabi paste
    1 tablespoon olive oil

    Directions

    In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.

    Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.

    Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.
