  • Recipe For Chicken Pasta II

    Ingredients

    1 (16 ounce) package radiatore pasta
    1/2 pound bacon
    4 boneless, skinless chicken breast halves, cut into bite-sized pieces
    3/4 cup white wine
    2 large tomatoes, cut into bite size pieces
    1 teaspoon dried Italian seasoning

    Directions

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Set bacon aside to drain on paper towels. Drain all but 1 tablespoon bacon grease, then saute chicken until no longer pink, and juices run clear. Break bacon into pieces, and return to skillet. Stir in wine and tomatoes. Sprinkle with Italian seasoning. Simmer until tomatoes are cooked, about 20 minutes. Serve sauce over cooked pasta.

  • Recipe For Gorgonzola Sauce

    Ingredients

    1 1/2 cups dry white wine
    1 1/4 cups heavy cream
    2 tablespoons grated Parmesan cheese
    4 ounces Gorgonzola cheese, crumbled
    1 pinch ground nutmeg
    black pepper to taste

    Directions

    In medium saucepan, cook white wine over high heat until reduced by half. Add cream, reduce heat, and cook until reduced by one-third. Add parmesan, gorgonzola and nutmeg. Stir until cheeses melt and sauce is creamy.

  • Recipe For Korean Barbequed Beef

    Ingredients

    1 1/2 pounds beef sirloin
    1/2 cup soy sauce
    1/2 cup rice wine
    2 tablespoons white sugar
    2 tablespoons minced garlic
    1 1/2 teaspoons toasted sesame oil
    1/4 teaspoon freshly ground black pepper
    1 teaspoon hot chile paste
    8 green onions, chopped into 1 inch pieces
    1 cup Bibb lettuce

    Directions

    Slice beef with the grain into long strips, about 1 1/2 inches wide, and place into a bowl. Stir together the soy sauce, rice wine, sugar, garlic, sesame oil, pepper, and chile paste in a small bowl. Pour one third of this mixture over the beef, and toss to coat. Marinate at least one hour at room temperature, or longer in the refrigerator. Simmer the remaining sauce, and the green onions in a small saucepan for one minute before pouring into a serving dish to cool.

    Wash and dry the lettuce, and trim off any large stems. Gently flatten the leaves with the side of a cleaver or large knife. Arrange on a serving dish.

    Preheat a grill for medium-high heat and lightly oil grate.

    Place grate three inches over the coals. Cook the meat to desired doneness, about three minutes per side for medium rare. Slice against the grain into thin strips.

    To serve, each diner places some beef and sauce into a lettuce leaf, folds it into a bundle, and eats it with their fingers.

  • Lemon Dressing Recipe

    Ingredients

    1/4 cup olive oil
    1/4 cup white wine vinegar
    1 teaspoon prepared mustard
    1 teaspoon minced garlic
    1 teaspoon white sugar
    1 teaspoon grated lemon rind

    Directions

    In a glass jar, combine olive oil, vinegar, mustard, garlic, sugar, and lemon rind; shake well. Refrigerate until ready to serve.
