  • Greek Lamb Stew Recipe

    Ingredients

    2 tablespoons olive oil
    1 pound lamb shoulder blade chops
    salt and pepper to taste
    1 large onion, chopped
    3 cloves garlic, minced
    1/2 cup dry red wine
    2 cups chopped tomatoes
    1 (15 ounce) can tomato sauce
    1 cup lamb stock
    1/2 lemon, zested and juiced
    1/2 teaspoon dried oregano
    1/2 teaspoon ground cinnamon
    1 bay leaf
    1 pound fresh green beans, trimmed
    1/4 cup chopped fresh parsley

    Directions

    Heat the olive oil in a large, heavy bottomed pot over medium-high heat. Season the lamb with salt and pepper, add to the pot, and cook until deeply browned, about 5 minutes on each side. Stir in the onions and garlic, and cook until lightly browned, about 2 minutes.

    Pour the wine into the pot, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir in the tomatoes, tomato sauce, lamb stock, lemon zest and juice, oregano, cinnamon, and bay leaf. Bring back to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the lamb is very tender, about 1 1/2 hours. Stir in the green beans and cook until they are tender, about 20 additional minutes.

    Remove the bay leaf and any bones from the stew. Garnish stew with chopped fresh parsley.

    Ingredients

    10 ounces angel hair pasta
    2 tablespoons butter
    1/2 red onion, chopped
    1 teaspoon minced garlic
    3 zucchini, diced
    1 pound button mushrooms, quartered
    1/4 cup red wine
    1 (16 ounce) jar pasta sauce
    1 (15 ounce) can whole kernel corn, drained

    Directions

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    While pasta is cooking, in large skillet over medium heat, saute onion in butter 2 minutes. Stir in garlic and zucchini and cook 3 minutes more. Add mushrooms and cook 5 minutes more, until mushrooms are soft. Pour in red wine and pasta sauce, reduce heat to low and simmer. Add corn and bring back to a simmer again to heat through.

    Serve sauce over pasta with a dab of butter, or toss together.

  • White Wine and Garlic Dream Cream

    Ingredients

    1 tablespoon butter
    3 large shallots, sliced thinly
    4 cloves garlic, chopped
    1 1/2 cups white wine, divided
    ground white pepper to taste
    3/4 cup heavy cream at room temperature
    1 lemon, juiced
    salt to taste

    Directions

    Melt butter in a medium saucepan over low heat. Cook and stir the shallots until they become translucent and tender; stir in garlic and cook until tender and aromatic.

    Stir in 1 cup white wine, increase heat to high and bring to a boil. Once it boils, add the remaining 1/2 cup wine. Boil for 10 minutes then reduce heat to medium-low. Season with white pepper to taste.

    When sauce is no longer boiling, slowly stir in cream, lemon juice and salt. Simmer for 3 to 5 minutes.

    2 1/2 ounces blue cheese
    3 tablespoons buttermilk
    3 tablespoons sour cream
    2 tablespoons mayonnaise
    2 teaspoons white wine vinegar
    1/4 teaspoon sugar
    1/8 teaspoon garlic powder
    salt and freshly ground black pepper

    Directions

    In a small bowl, mash blue cheese and buttermilk together with a fork until mixture resembles large-curd cottage cheese. Stir in sour cream, mayonnaise, vinegar, sugar, and garlic powder until well blended. Season to taste with salt and pepper.
