  • Recipe For Smoked Steelhead Trout (Salmon)

    Ingredients

    2 pounds steelhead trout fillets
    2 tablespoons olive oil
    4 cloves garlic, chopped
    1 1/2 tablespoons dried rosemary, crushed
    1 cup curing salt
    1 quart water
    ground black pepper to taste
    1 pound alder wood chips, soaked in water or wine

    Directions

    Rinse the fish fillets and place them in a shallow glass baking dish. Drizzle olive oil over the fish and season with garlic and rosemary. Rub the seasonings into the fish. Cover and refrigerate overnight.

    Dissolve the curing salt in the water and pour into the dish with the fish. Let it marinate for 15 minutes per half inch of thickness.

    Meanwhile, prepare your smoker for a four hour slow burn using charcoal. The temperature should be at 150 degrees F (65 degrees C) before you get started.

    Remove the fish from the brine and discard leftover liquid. Place each piece of fish onto a small piece of aluminum foil – just big enough to hold the fillet, and season with pepper to taste. Place them on the rack in the smoker. Sprinkle a handful of the soaked wood chips over the coals or place in a heat box. Cover and allow fish to smoke for 2 hours, adding more wood chips as needed.

    Increase the heat in the smoker (add more charcoal) to 200 degrees F (95 degrees C) and let the fish smoke until the internal temperature of the fillets reaches 165 degrees F (72 degrees C). Remove from the smoker and let rest for 20 minutes before serving.

  • How To Make Chickpea Salad

    Ingredients

    1 (15 ounce) can chickpeas (garbanzo beans), drained
    1/2 onion, chopped
    1/2 cucumber, sliced
    1 small tomato, chopped
    1/2 cup red wine vinegar
    1/2 cup balsamic vinegar

    Directions

    In a medium bowl combine chickpeas, onion, cucumber, tomato, red wine vinegar and balsamic vinegar. Mix well and serve.

  • How To Make Sea Bass Cuban Style

    Ingredients

    2 tablespoons extra virgin olive oil
    1 1/2 cups thinly sliced white onions
    2 tablespoons minced garlic
    4 cups seeded, chopped plum tomatoes
    1 1/2 cups dry white wine
    2/3 cup sliced stuffed green olives
    1/4 cup drained capers
    1/8 teaspoon red pepper flakes
    4 (6 ounce) fillets sea bass
    2 tablespoons butter
    1/4 cup chopped fresh cilantro

    Directions

    Heat oil in a large skillet over medium heat. Saute onions until soft. Stir in garlic, and saute about 1 minute. Add tomatoes, and cook until they begin to soften. Stir in wine, olives, capers, and red pepper flakes. Heat to a simmer.

    Place sea bass into sauce. Cover, and gently simmer for 10 to 12 minutes, or until fish flakes easily with a fork. Transfer fish to a serving plate, and keep warm.

    Increase the heat, and add butter to sauce. Simmer until the sauce thickens. Stir in cilantro. Serve sauce over fish.

  • Spicy Tomato Chutney

    Ingredients

    4 pounds ripe tomatoes
    1 (1 inch) piece fresh ginger root
    3 cloves garlic
    1 3/4 cups white sugar
    1 cup red wine vinegar
    2 onions, diced
    1/4 cup golden raisins
    2 teaspoons mixed spice
    1 teaspoon chili powder
    1 pinch paprika
    1 tablespoon curry paste

    Directions

    Fill a saucepan with water, and bring to a boil. Place tomatoes in boiling water, and cook for 3 to 5 minutes, or until skins begin to crack and peel. Remove from water, cool, and peel.

    Puree tomatoes with ginger and garlic in a food processor or blender.

    Place tomato mixture, sugar, vinegar, onions, and golden raisins in a large saucepan. Season with mixed spice, chili powder, paprika, and curry paste. Simmer over medium heat until thick. Refrigerate until ready to use.
