    Ingredients

    1 tablespoon red wine vinegar
    1 teaspoon white sugar
    1/3 cup mayonnaise
    1 tablespoon coarse-grain brown mustard
    1 head cabbage, cored and shredded
    2 hard-cooked eggs, peeled and chopped
    6 slices crisply cooked bacon, crumbled
    salt and pepper to taste

    Directions

    In a large bowl, stir together the vinegar, sugar, mayonnaise and mustard. Add the cabbage, eggs and bacon, and toss lightly to coat with the dressing. Season with salt and pepper. Refrigerate for 1 hour before serving to blend flavors.

    Ingredients

    4 skinless, boneless chicken breast halves
    Salt and pepper to taste
    2 tablespoons butter, divided
    1 small onion, chopped
    3 tablespoons red wine vinegar
    1/4 cup orange juice
    1/2 cup chicken broth
    2 tablespoons cornstarch dissolved in
    2 tablespoons water
    1 cup fresh raspberries, rinsed and drained
    1 orange, peeled and sectioned

    Directions

    Season the chicken breasts to taste with salt and pepper. Melt 1 tablespoon of butter in a large skillet over medium heat. Sear, and cook until browned on both sides and the juices run clear, about 10 minutes. Remove chicken and keep warm.

    Melt remaining 1 tablespoon of butter in skillet; stir in onion and cook until translucent, 3 to 4 minutes. Pour in red wine vinegar, orange juice, and chicken broth; increase heat to medium-high, and bring to a boil. Stir in the cornstarch and water mixture, and cook until the sauce thickens and turns clear, 1 to 2 minutes. Reduce heat to medium, and stir in the raspberries and orange segments; cook for 2 minutes until softened. Add the chicken breasts to the sauce, and cook to reheat. Serve chicken with sauce spooned over it.

  • How To Make Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce

    Ingredients

    2 (5 ounce) beef tenderloin filets
    1 tablespoon olive oil
    coarse sea salt to taste
    1 tablespoon cracked white peppercorns
    1 tablespoon olive oil
    1 tablespoon minced shallot
    1/4 cup port wine
    1 tablespoon balsamic vinegar
    1/4 cup beef stock
    1 teaspoon minced fresh rosemary
    1/2 (1 ounce) square bittersweet chocolate, chopped

    Directions

    Brush the tenderloin filets on all sides with 1 tablespoon olive oil, then sprinkle with sea salt and cracked pepper. Heat another tablespoon of olive oil in a skillet over medium-high heat until it begins to smoke. Add the steaks, and cook to your desired degree of doneness, 4 minutes per side for medium-rare. Once done, remove the steaks from the skillet and keep warm.

    Stir in the minced shallot, and cook for 1 minute. Pour in the port and balsamic vinegar. Simmer until the port reduces to the consistency of chocolate syrup, 2 to 3 minutes. Add the beef stock and rosemary, and return to a simmer. Once the sauce has begun to simmer, whisk in the chocolate until it melts and slightly thickens the sauce. Pour sauce over steaks to serve.

    Ingredients

    6 (4 ounce) (1/2-inch thick) pork chops
    1 lemon
    3/4 cup ketchup
    1/4 cup packed brown sugar
    1 teaspoon white wine vinegar

    Directions

    Preheat oven to 325 degrees F (165 degrees C).

    In a large skillet over medium heat, brown pork chops on both sides. Remove chops and place them in a shallow baking dish.

    Combine the ketchup, brown sugar, and vinegar. Pour mixture over chops, spreading to cover evenly. Cut 6 slices from the lemon, and lay one slice on top of each chop. Squeeze the juice from the remaining portion of lemon over the chops.

    Cover and bake for 30 minutes at 325 degrees F (165 degrees C). Uncover and bake for 10 minutes more.
