  • Garam Masala Seared Salmon with Coconut-Curry Butter Recipe

    Ingredients

    3/4 cup dry white wine
    1/2 cup heavy cream
    1/3 cup coconut milk
    2 tablespoons curry powder
    1 cup cold, unsalted butter, cut into pieces
    kosher salt to taste
    1/4 cup vegetable oil
    8 (6 ounce) fillets Alaskan king salmon
    2 tablespoons garam masala
    kosher salt to taste

    Directions

    Pour white wine, cream, and coconut milk into a saucepan; season with curry powder. Bring to a light boil over medium-high heat, then reduce heat to medium-low, and simmer until the liquid has reduced to 1/2 cup, about 10 minutes.

    When the liquid has reduced, turn heat to low, and whisk in the butter, a few cubes at a time, until all of the butter has incorporated. Do not allow the mixture to boil or else it will separate. When the butter has incorporated, season to taste with salt and set aside to keep warm.

    Heat the oil in a saute pan over medium-high heat until it begins to smoke. While the oil is heating, lightly season both sides of the salmon with garam masala and salt.

    Sear the salmon in the hot oil for 3 to 4 minutes on one side, then turn over, and continue cooking for 2 to 3 minutes until done. Briefly drain on paper towels to absorb excess oil, then serve immediately with the curry butter sauce.

  • Red Wine Sesame Biscuits

    Ingredients

    2 1/2 cups all-purpose flour
    1/3 cup white sugar
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 egg
    1/2 cup vegetable oil
    1/3 cup red wine
    1 egg white
    2 tablespoons sesame seeds, toasted

    Directions

    Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.

    In a medium bowl, stir together the flour, sugar, baking powder and salt. Add the egg, oil and wine all at once and mix until well blended. Let the dough rest for 5 minutes. Roll the dough into log shapes and cut into irregularly shaped 1 inch slices. Roll each piece of dough in the egg white and then roll to coat with sesame seeds. Place cookies at least 1 inch apart onto the prepared cookie sheets.

    Bake for 25 to 30 minutes in the preheated oven, until lightly browned. Turn the oven off and leave the cookies inside to crisp. These cookies will keep for weeks in an air tight container.

  • How To Make Pan Seared Red Snapper

    Ingredients

    2 (4 ounce) fillets red snapper
    1 tablespoon olive oil
    1 lemon, juiced
    2 tablespoons rice wine vinegar
    1 teaspoon Dijon mustard
    1 tablespoon honey
    1/4 cup chopped green onions
    1 teaspoon ground ginger

    Directions

    Rinse snapper under cold water, and pat dry. In a shallow bowl, mix together olive oil, lemon juice, rice vinegar, mustard, honey, green onions, and ginger.

    Heat a non-stick skillet over medium heat. Dip snapper fillets in marinade to coat both sides, and place in skillet. Cook for 2 to 3 minutes on each side. Pour remaining marinade into skillet. Reduce heat, and simmer for 2 to 3 minutes, or until fish flakes easily with a fork.

  • Richard’s Chicken Breasts Recipe

    Ingredients

    8 skinless, boneless chicken breast halves
    1/2 cup all-purpose flour
    1 teaspoon poultry seasoning
    1 tablespoon olive oil
    1 tablespoon butter
    1/4 cup Marsala wine
    1 cup chopped portobello mushrooms
    1 cup chopped onion
    1 teaspoon dried rosemary
    4 slices mozzarella cheese

    Directions

    Season flour with poultry seasoning. Dredge the chicken breasts in the seasoned flour. In a medium skillet over medium-high heat, fry the chicken in the oil for about 5 minutes each side, depending on the thickness. Remove the chicken and set aside (keep warm.)

    Deglaze pan with Marsala wine (deglazing is swirling or stirring a liquid in a pan to dissolve cooked food particles remaining on the bottom). Add the chopped mushrooms, chopped onions and rosemary. Saute for 5 minutes over high heat.

    Return the chicken breasts to the skillet, baste with drippings, put cheese on the breasts and cook for another 2 1/2 minutes with the lid on tightly. Don’t touch the lid! Remove from heat and let stand for 10 minutes, until the breasts cook through. Check the seasoning and adjust. You will have the plumpest, juiciest chicken breasts you can imagine!
