    Ingredients

    1/2 cup plain yogurt
    1/4 cup Dijon mustard
    1 tablespoon honey
    1/4 cup fresh lemon juice
    3 tablespoons chopped fresh dill

    1 pound salmon
    1 cup white wine
    1/2 cup water
    1/4 cup chopped shallots

    Directions

    In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.

    In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

    Ingredients

    1/2 cup water
    1 cup white sugar
    1/2 cup red wine vinegar
    1 tablespoon celery seed
    1 small red onion, thinly sliced
    2 large cucumbers, chopped
    6 roma (plum) tomatoes, sliced
    1 green bell pepper, diced
    1 red bell pepper, diced

    Directions

    In a saucepan over medium heat, combine the water, sugar, vinegar and celery seed. Stir until dissolved.

    In a medium-size mixing bowl, layer the red onion, cucumber, tomatoes, green bell pepper and red bell pepper. Pour sugar mixture over vegetables, cover and refrigerate overnight. Serve chilled.

  • How To Make Tri-Color Chopped Salad with Pine Nuts and Parmesan Cheese

    Ingredients

    Vinaigrette:
    1 tablespoon Dijon mustard
    1 tablespoon red wine vinegar
    1 tablespoon chopped fresh oregano
    3 tablespoons extra-virgin olive oil
    salt and pepper to taste

    1 cup chopped radicchio
    1 cup chopped Belgian endive leaves
    2 cups chopped arugula
    1/4 cup freshly grated Parmigiano-Reggiano cheese
    1/4 cup toasted pine nuts

    Directions

    For the vinaigrette: Whisk together the mustard, red wine vinegar and chopped oregano in a small bowl. Whisk in the olive oil until the consistency is smooth and creamy. Season with salt and pepper to taste. Set aside.

    Toss together the radicchio, Belgian endive, arugula, grated Parmigiano-Reggiano cheese and pine nuts in a large salad bowl. Pour the vinaigrette over the salad ingredients and toss lightly to coat. Divide onto four chilled salad plates and serve.

  • Recipe For Wild Mushroom Sauce

    Ingredients

    4 tablespoons butter
    1/4 cup finely chopped shallots
    2 ounces portobello mushrooms, sliced
    2 ounces crimini mushrooms, sliced
    2 ounces shiitake mushrooms, sliced
    2 ounces morel mushrooms, sliced
    2 ounces chanterelle mushrooms, sliced
    1/2 cup red wine
    6 fluid ounces beef demi glace
    salt and freshly ground black pepper to taste

    Directions

    Melt butter in a saucepan over medium heat. Saute shallots briefly, then stir in all of the mushrooms. Saute until tender and translucent, about 3 minutes. Pour in red wine, and simmer for 3 minutes. Stir in demi glace, and simmer for 6 minutes, or until sauce has thickened.
