  • Black Lung Braised Brisket Recipe

    Ingredients

    1/2 cup red wine
    1/4 cup Worcestershire sauce
    1/4 cup liquid smoke flavoring
    1 tablespoon molasses
    2 teaspoons onion powder
    2 teaspoons garlic powder
    salt and pepper to taste
    1 (3 pound) beef brisket
    2 (14 ounce) cans beef broth

    Directions

    Whisk together the red wine, Worcestershire sauce, liquid smoke, molasses, onion powder, garlic powder, salt, and pepper in a bowl; pour into a resealable plastic bag. Add the brisket, coat with the marinade, squeeze out excess air, and seal the bag. Marinate overnight in the refrigerator.

    Remove the brisket from the marinade and shake off excess. Reserve the remaining marinade. Heat a deep skillet over medium-high heat. Cook the brisket until browned on both sides, about 5 minutes per side.

    Pour the reserved marinade into the skillet along with the beef broth. Bring to a boil; reduce heat to medium-low, cover, and simmer until the brisket can be pulled apart with a fork, 2 1/2 to 3 hours.

  • Smoked Salmon Pasta with Scotch

    Ingredients

    1 (16 ounce) package dry penne pasta
    1 tablespoon olive oil
    1 medium onion, finely chopped
    2 cups fish stock
    2 cups white wine
    3 tablespoons Scotch whiskey
    1/2 pound chopped smoked salmon
    2 cups heavy cream
    freshly ground black pepper to taste
    1/2 cup grated Parmesan cheese for topping
    1 bunch Italian flat leaf parsley, chopped

    Directions

    Bring a large pot of lightly salted water to a boil. Place penne pasta in the pot, cook 8 to 10 minutes, until al dente, and drain.

    Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Pour in the fish stock and white wine, and cook until reduced by 1/2.

    Remove the skillet from heat, and pour in the Scotch whiskey. Using a long match, carefully ignite the Scotch. Once the flame had subsided, return the skillet to medium heat, and mix in the salmon. Stir in the cream, and bring the mixture to a boil. Continue to cook and stir until thickened.

    In a large bowl, toss the cooked penne pasta with the salmon mixture. Season with pepper, and top with Parmesan cheese and parsley to serve.

  • Recipe For Neptune’s Favorite Crab Bisque

    Ingredients

    1 (10.75 ounce) can condensed cream of mushroom soup
    1 (10.75 ounce) can cream of asparagus soup
    2 cups milk
    1 cup light cream
    1 (6 ounce) can crabmeat
    1 1/4 cups white wine

    Directions

    Blend both cans of soup in medium or large pot, stir in milk and cream. Simmer over medium heat, stirring frequently (so milk and cream do not scorch). When boiling point is nearly reached, turn down heat.

    Flake crab meat and add to soup. Simmer an additional 5 minutes, then add white wine. Add small amount of butter to surface (optional) and sprinkle with chervil or parsley.

    Variations: (1) For a low-fat version, omit butter. Instead of milk and cream, substitute non-fat milk. (2) Instead of canned crab, use fresh or imitation crab. If using fresh crab, be sure to remove all cartilage and shell. (3) Substitute crab with lobster, clams, or mussels (shells or no shells). For an exquisite seafood bisque, combine all of the above. Yum!

  • Recipe For Baked Chicken Thermidor

    Ingredients

    2 cups cooked, cubed chicken meat
    1 cup diced celery
    1 cup frozen green peas
    1 (5 ounce) can water chestnuts, drained and chopped
    1/2 cup toasted and sliced almonds
    2 cups chopped red bell pepper
    1/4 cup chopped onion
    2 tablespoons chopped pimento peppers (optional)
    2 tablespoons white wine
    1 1/2 teaspoons lemon juice
    1/2 cup milk
    1 (10.75 ounce) can condensed cream of chicken soup
    2 slices white bread, cut into cubes
    1 cup shredded Cheddar cheese

    Directions

    Preheat oven to 375 degrees F (190 degrees C).

    In a large heat-resistant bowl combine the chicken, celery, peas, water chestnuts, 1/4 cup of the almonds, bell pepper, onion, pimiento, wine and lemon juice. Mix all together.

    In a saucepan heat the milk and soup over low heat, stirring. Pour soup/milk mixture into bowl containing chicken mixture and mix well. Pour this mixture into a lightly greased 9×13 inch baking dish. Top with bread crumbs.

    Bake casserole in the preheated oven for 20 minutes, until bubbly. Sprinkle cheese on top and bake for 5 to 6 minutes more. Sprinkle remaining 1/4 cup almonds on top and serve.
