  • Chili Sauce Chicken Recipe

    Ingredients

    1 (12 ounce) bottle chili sauce
    1/3 cup white wine or chicken broth
    1/4 cup olive or vegetable oil
    10 cloves garlic, minced
    4 1/2 teaspoons dried basil
    1/2 teaspoon salt
    1/8 teaspoon pepper
    8 chicken thighs

    Directions

    In a large resealable plastic bag, combine the first seven ingredients; mix well. Remove 1/3 cup for basting; cover and refrigerate. Add chicken to bag; seal and turn to coat. Chill for at least 2 hours.

    Drain and discard marinade from chicken. Grill, covered, skin side down, over medium heat for 20 minutes. Baste with some of the reserved marinade. Turn; grill 10 minutes longer or until the chicken juices run clear, basting frequently.

  • Pork Marsala

    Ingredients

    1/3 cup all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon garlic salt
    3/4 teaspoon garlic powder
    1/2 teaspoon dried oregano
    1 pound boneless pork loin chops, pounded thin
    3 tablespoons butter
    1/4 cup olive oil
    2 cups sliced fresh mushrooms
    1 teaspoon minced garlic
    1 cup Marsala wine

    Directions

    Mix flour, salt ,garlic salt, garlic powder, and oregano together in a medium bowl. Add pork chops, and toss until well coated.

    Heat butter and olive oil in a large skillet over medium heat. Place pork in skillet in a single layer, and cook, turning occasionally, until brown on both sides. Add mushrooms and minced garlic; cook and stir briefly.

    Stir in wine, scraping the skillet to loosen any brown bits. Cover and simmer over medium heat until pork is tender and sauce is thickened, about 15 minutes. If sauce is too thick, adjust by stirring in a small amount of wine.

  • Recipe For Rabbit Fricassee Cuban-Style

    Ingredients

    1 (3 pound) rabbit, cleaned and cut into pieces
    2 1/2 cups water
    1 large onion, chopped
    3 cloves garlic, chopped
    1 green bell pepper, chopped
    1/4 teaspoon saffron powder
    1 teaspoon ground cumin
    1 teaspoon salt, or to taste
    1 teaspoon black pepper
    2 tablespoons fresh lemon juice
    1 bay leaf
    1 (8 ounce) can tomato sauce
    1 pound potatoes, peeled and quartered
    1/4 cup dry white wine
    1/4 cup capers, drained
    1 cup raisins
    1/4 cup chopped green olives
    1/4 cup olive oil
    1 (10 ounce) can baby peas, drained

    Directions

    Place the rabbit pieces in a deep skillet or Dutch oven over medium heat along with the onion, garlic, and green pepper. Season with saffron, cumin, salt, pepper, lemon juice and the bay leaf. Pour the water over all. Bring to a boil, then simmer for 20 minutes.

    Add the potatoes, and cook for about 20 more minutes, until tender. Add the raisins, capers, white wine, tomato sauce, olives and olive oil. Simmer for about 5 more minutes. Finally, stir in the peas and remove from the heat.

  • Chicken with Ginger Pesto Recipe

    Ingredients

    2 pounds skinless, boneless chicken breast halves
    1/2 cup dry white wine

    1/4 cup vegetable oil
    2 tablespoons grated fresh ginger root
    2 cloves garlic, minced
    1 tablespoon salt
    1 teaspoon white sugar
    1 bunch green onions, cut into 1/4-inch pieces

    Directions

    Pour the white wine into a saucepan of lightly salted water, and place the chicken breasts into the pan. Bring the pan to a boil, reduce the heat, and simmer the chicken until cooked through and white, 8 to 10 minutes. Remove from the heat, and let the chicken cool in the broth. Remove from the broth, and set the chicken aside.

    Heat the vegetable oil in a skillet over medium-low heat, and stir in the ginger, garlic, salt, and sugar. Reduce heat to low, and cook, stirring occasionally, until the garlic is browned and soft, and the oil is flavored, about 20 minutes. Stir in the green onions, and cook for another 10 minutes, stirring occasionally, until the white parts of the onions are soft.

    Slice the poached chicken breasts on the bias into slices about 1 inch wide, and arrange attractively on a plate. Spoon the green onion mixture over the chicken breasts, and serve.
