  • Red Wine Braised Short Ribs with Smashed Fall Vegetables

    Ingredients

    5 pounds beef short ribs
    1/3 cup all-purpose flour
    1 tablespoon olive oil
    1 large Spanish onion, sliced
    3 large carrots, cut into 2 inch pieces
    2 stalks celery, cut into 2 inch pieces
    2 cloves garlic, chopped
    1 tablespoon chopped fresh rosemary leaves
    4 cups Swanson(r) Beef Broth (regular, Lower Sodium or Certified Organic)
    1 cup dry red wine
    1 3/4 cups Swanson(r) Vegetable Broth or Chicken Broth (regular or Certified Organic)
    1 small butternut squash, peeled and cut into 1-inch pieces
    1 medium sweet potato, diced
    1/2 pound turnips, cut into quarters
    1/2 pound parsnips, thickly sliced
    1 Spanish onion, cut into quarters
    2 cloves garlic

    Directions

    Coat the ribs with the flour and seasonings as desired.

    Heat the oil in an 8-quart saucepot over medium-high heat. Add the ribs in 2 batches and cook until they’re well browned on all sides. Remove the ribs with a slotted spoon and set them aside.

    Add the onions to the pot and cook for 5 minutes. Add the carrots, celery, garlic and rosemary. Cook for 3 minutes. Add the beef broth and wine. Return the beef to the pot. Heat to a boil. Reduce the heat to low. Cover and cook for 1 to 1 1/2 hours, or until the meat is very tender.

    While the ribs are cooking, prepare the smashed vegetables: Place vegetable broth, squash, sweet potato, turnips, parsnips, onion and garlic in a 4-quart saucepot over high heat. Heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the vegetables are tender. Drain vegetables, reserving the liquid.

    Mash the vegetables with 1/2 to 1 cup reserved broth using a potato masher until the vegetables are desired consistency. Serve with the ribs.

  • Salmon Deviled Eggs with Homemade Mayonnaise Recipe

    Ingredients

    Homemade Mayonnaise:
    2 egg yolks, room temperature
    1 clove garlic, pressed
    1/2 cup vegetable oil
    1 pinch salt and pepper to taste
    2 tablespoons red wine vinegar, or to taste

    12 eggs
    1 shallot, minced
    1 (6 ounce) can salmon, drained and flaked
    1 pinch salt and pepper to taste

    Directions

    To make the mayonnaise, beat the egg yolks in a medium bowl with an electric mixer or hand blender. Slowly blend in the oil, one tablespoon at a time while mixing constantly. Continue to add oil until the consistency is a little thicker than regular mayonnaise. Pierce the garlic clove, and stir it around in the mixture until it releases its juice. Remove the garlic and season with salt and pepper. Mix in the red wine vinegar 1 teaspoon at a time. Go slow, this will thin the mayonnaise a bit.

    Place the eggs in a large pot with enough water to cover. Bring to a boil, then simmer for 10 minutes. Remove from the heat, drain and cool. Peel off the shells, and cut eggs in half lengthwise. Remove the yolks, and place them into a medium bowl. Place the egg whites on a serving plate.

    To the yolks, add shallot, salmon, 1/2 cup of the mayonnaise, salt and pepper. Mix until well blended. If the mixture seems dry, stir in more mayonnaise. Spoon into the egg white halves and chill or serve.

  • Garden Tomato Salsa Recipe

    Ingredients

    1/2 sweet onion, chopped
    1/2 green bell pepper, coarsely chopped
    1/4 cup fresh cilantro
    5 slices pickled jalapeno peppers, or to taste
    6 fresh tomatoes, quartered
    2 teaspoons olive oil
    2 teaspoons red wine vinegar
    1/2 lime, juiced
    1/8 teaspoon salt

    Directions

    Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor. Pulse until finely chopped. Add tomatoes, and pulse just a few times until the tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.

    In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, and salt.

    Pour dressing over tomatoes, and stir well. Cover, and refrigerate for at least 1 hour.

  • Vegan Fajitas

    Ingredients

    1/4 cup olive oil
    1/4 cup red wine vinegar
    1 teaspoon dried oregano
    1 teaspoon chili powder
    garlic salt to taste
    salt and pepper to taste
    1 teaspoon white sugar

    2 small zucchini, julienned
    2 medium small yellow squash, julienned
    1 large onion, sliced
    1 green bell pepper, cut into thin strips
    1 red bell pepper, cut into thin strips
    2 tablespoons olive oil
    1 (8.75 ounce) can whole kernel corn, drained
    1 (15 ounce) can black beans, drained

    Directions

    In a large bowl combine olive oil, vinegar, oregano, chili powder, garlic salt, salt, pepper and sugar. To the marinade add the zucchini, yellow squash, onion, green pepper and red pepper. Marinate vegetables in the refrigerator for at least 30 minutes, but not more than 24 hours.

    Heat oil in a large skillet over medium-high heat. Drain the vegetables and saute until tender, about 10 to 15 minutes. Stir in the corn and beans; increase the heat to high for 5 minutes, to brown vegetables.
