    Ingredients

    2 tablespoons butter
    1 cup walnut halves
    1 tablespoon sugar
    1/8 teaspoon pepper
    5 cups torn romaine
    5 cups torn red leaf lettuce
    1 medium red apple, chopped
    1 green apple, chopped
    1/2 cup crumbled feta cheese
    DRESSING:
    6 tablespoons white wine vinegar
    2 tablespoons finely chopped onion
    1 1/2 teaspoons Dijon mustard
    2 garlic cloves, minced
    1/2 teaspoon sugar
    1/4 teaspoon dried oregano
    1/8 teaspoon salt
    1/8 teaspoon dried parsley flakes
    1/8 teaspoon pepper

    Directions

    In a small skillet, melt the butter over medium heat. Add the walnuts; sprinkle with sugar and pepper. Stir until well coated. Spread onto a baking sheet. Bake at 350 degrees F for 15 minutes or until lightly browned, stirring every 5 minutes. Cool on a wire rack.

    In a large bowl, combine romaine, red lettuce, apples and feta cheese; set aside. In a blender, combine the dressing ingredients; cover and process until blended. Drizzle over salad; toss to coat. Sprinkle with sugared walnuts.

    Ingredients

    4 (6 ounce) beef tenderloin filets
    2 tablespoons salt-free seasoning blend
    2 tablespoons soy sauce
    2 tablespoons rice wine vinegar
    2 tablespoons sesame oil
    2 tablespoons ground allspice
    1 tablespoon minced fresh ginger
    1 tablespoon minced garlic
    2 tablespoons extra virgin olive oil, divided
    2 cups shredded napa (Chinese) cabbage
    1 cup chopped shiitake mushrooms
    1 cup chopped cucumber
    1 cup bean sprouts
    1/2 cup fresh snow peas, trimmed
    1 tablespoon chopped green onions
    2 cups chopped fresh spinach leaves
    1 cup chopped fresh parsley

    Directions

    Rub seasoning blend into both sides of filets and place in a large, resealable plastic bag. In a medium bowl, stir together the soy sauce, rice wine vinegar, sesame oil, allspice, ginger, and garlic. Pour marinade into the bag and shake gently to ensure it coats the meat. Refrigerate filets for at least 3 hours or overnight.

    Preheat oven to 350 degrees F (175 degrees C).

    Remove filets from plastic bag and reserve marinade. Use a paper towel to pat the meat dry. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the filets on all sides, about 5 minutes. Place filets onto a baking sheet and bake in preheated oven until they reach an internal temperature of 140 degrees F (60 degrees C) for medium, about 10 minutes.

    Meanwhile, in a large skillet over medium heat, heat the remaining olive oil. Stir-fry the cabbage, mushrooms, cucumbers, bean sprouts, snow peas, and green onions until tender, about 4 minutes. Stir in the spinach, parsley, and reserved marinade; cook another 5 minutes.

    To serve, divide the vegetables between four plates; cut the filets into thick slices and place on top of vegetables.

    Ingredients

    4 ounces uncooked Asian rice noodles
    2 teaspoons cornstarch
    3 tablespoons soy sauce
    2 tablespoons rice wine vinegar
    2 tablespoons hoisin sauce
    1 teaspoon minced gingerroot
    1 teaspoon minced garlic
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 (14 ounce) package frozen stir fry vegetable blend
    1 1/2 cups shredded carrots
    2 teaspoons sesame oil, divided
    1 1/2 pounds beef flank steak, cut into thin strips
    2 teaspoons sesame seeds, toasted

    Directions

    In a large bowl, soak noodles in boiling water for 10 minutes. Meanwhile, in a small bowl, combine the cornstarch, soy sauce, vinegar, hoisin sauce, ginger, garlic, salt and pepper until blended; set aside.

    In a large skillet or wok, stir-fry the vegetable blend and carrots in 1 teaspoon oil for 2-3 minutes or until crisp-tender. Remove and keep warm. In the same pan, stir-fry beef in remaining oil for 3-4 minutes or until no longer pink.

    Stir soy sauce mixture and add to pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain noodles. Stir noodles and vegetables into beef mixture; heat through. Sprinkle with sesame seeds.

    Ingredients

    1 pound linguini pasta
    1/4 cup butter
    5 cloves garlic, minced
    1 pound medium shrimp – peeled and deveined
    1 cup bread crumbs
    1/2 cup white wine
    1 lemon, juiced
    1/4 cup light olive oil

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain pasta, and set aside.

    In a large skillet, melt butter over medium heat. Add most of the garlic, keeping some for later. Coat the garlic completely with butter. Do not let the garlic brown. Add shrimp, and toss to coat. Immediately remove pan from heat; shrimp will not be cooked yet.

    Sprinkle the shrimp with breadcrumbs (enough to coat the shrimp), and transfer the entire mixture to a medium casserole dish. Pour wine and the lemon juice over the shrimp. Cover, and bake at 350 degrees F (175 degrees C) for 10 minutes.

    Remove cover, and bake an additional 5 minutes.

    In a small saucepan heat olive oil with remaining garlic. Toss the pasta with the olive oil and garlic mixture. Serve the shrimp over the pasta with additional lemon slices on the side.
