    Ingredients

    2 tablespoons extra virgin olive oil
    1 large yellow onion, diced
    1 clove garlic, minced
    4 pounds pork shoulder roast
    1/2 cup white wine
    3 cups water
    2 teaspoons dried oregano
    2 teaspoons dried parsley
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
    3 tablespoons garlic powder
    1 teaspoon salt
    1 teaspoon black pepper
    2 (28 ounce) cans tomato puree
    6 cups water
    1/4 cup white sugar

    Directions

    Heat olive oil in a large stock pot over medium heat. Saute onions and garlic until lightly browned. Place pork shoulder in pot, and pour in 1/2 cup white wine and 3 cups water. In a small bowl, combine oregano, parsley, thyme, rosemary, garlic powder, salt and pepper. Sprinkle 1/4 of spice mixture over pork. Cover, and cook for 30 minutes turning occasionally. Add water periodically if needed.

    Pour in tomato puree. Fill cans with water, and pour in (about 6 cups). Stir in remaining spice mixture and the sugar. When liquid starts to bubble, reduce heat to low, cover, and cook for 4 to 5 hours. Stir occasionally, and adjust seasonings to taste.

    Ingredients

    1/4 cup butter
    2 tablespoons garlic, minced
    1 bunch flat-leaf parsley, chopped
    2 pints grape tomatoes, halved
    1/2 (750 milliliter) bottle dry white wine
    2 pounds peeled and deveined medium shrimp
    1 (4 ounce) container crumbled feta cheese
    2 lemons, halved
    2 sprigs fresh flat-leaf parsley

    Directions

    Melt the butter in a saucepan over medium heat. Stir in the garlic, chopped parsley, tomatoes, and wine. Bring to a simmer, then reduce heat to medium-low, and cook for 1 hour, stirring occasionally, until the sauce has slightly thickened.

    Preheat oven to 250 degrees F (120 degrees C).

    Stir the shrimp into the tomato sauce, and cook for 2 minutes; remove from the heat. Pour the shrimp mixture into a shallow baking dish, and sprinkle with crumbled feta cheese. Bake in the preheated oven until the feta has softened and the shrimp are no longer translucent, 45 minutes to 1 hour. Squeeze the lemon halves over the shrimp and garnish with the parsley sprigs to serve.

  • Easy Borscht

    Ingredients

    1 1/2 pounds new potatoes
    2 pounds country style pork ribs, chopped
    1/2 cup chopped onion
    6 cups water, divided
    2 (15 ounce) cans red beets, drained and chopped, juice reserved
    2 cups sour cream
    2 tablespoons red wine vinegar
    salt and pepper to taste

    Directions

    Bring a large pot of water to a boil. Add potatoes, and cook until tender, about 15 minutes.

    In another pot, simmer ribs and onions in 4 cups of water for 2 hours, or until ribs are tender. Remove ribs, and set aside. Skim fat from simmering liquid, and pour in beet juice. Add chopped pork and beets, and bring to a simmer.

    In a bowl, whisk sour cream together with 2 cups of water and the vinegar. Slowly stir into soup. Season to taste with salt and pepper. Serve over boiled potatoes.

  • Recipe For Yellowtail a la Gruntag

    Ingredients

    1/2 cup white wine
    2 tablespoons brandy-based orange liqueur (such as Grand Marnier(r))
    1 tablespoon grated fresh ginger root
    1 cup hollandaise sauce
    1 tablespoon frozen orange juice concentrate, thawed
    8 (3 ounce) fillets yellowtail flounder
    4 tablespoons orange juice
    8 pinches dried thyme
    8 teaspoons butter

    Directions

    In a small saucepan over medium heat, combine the white wine, Grand Marnier, and grated ginger. Bring to a boil, and reduce the mixture by one half. Strain, and set aside to cool slightly. Whisk the reduction into the hollandaise sauce, and mix in orange juice concentrate.

    Preheat your oven’s broiler. Place the filets onto a baking sheet, and dot each one with one teaspoon of butter, sprinkle with a pinch of thyme, and drizzle with 1/2 tablespoon of orange juice.

    Broil the fillets for 3 to 5 minutes, or until just barely done. Fish should be opaque and flake with a fork. Ladle sauce onto plates, and place yellowtail fillets onto sauce.
