  • How To Make Rosemary Chicken with Orange-Maple Glaze

    Ingredients

    1 cup orange juice
    1/2 cup dry white wine
    1/2 cup maple syrup
    2 teaspoons chopped fresh rosemary
    1/2 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    4 skinless, boneless chicken breast halves
    2 tablespoons butter
    2 tablespoons olive oil

    Directions

    Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.

    In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.

    Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

    Ingredients

    1 (750 milliliter) bottle 151 proof rum
    1 (750 milliliter) bottle Chianti wine
    2 1/2 fluid ounces lemon juice
    3 (12 fluid ounce) cans or bottles lemon-lime flavored carbonated beverage
    1 (46 fluid ounce) can fruit punch

    Directions

    In a gallon jug or punch bowl, combine rum, wine, lemon juice and carbonated beverage. Fill remaining space with fruit punch. Adjust ingredients to taste. Serve in a red plastic cup.

  • Cuban Pork Roast II

    Ingredients

    5 pounds boneless loin pork roast
    6 cloves crushed garlic
    1/2 teaspoon dried rosemary, crushed
    1/2 teaspoon dried dill weed
    1/2 teaspoon dried oregano
    1 cup dry red wine
    10 cloves garlic

    Directions

    In a small bowl, mix together crushed garlic, rosemary, dill, oregano, and red wine. Place roast in a large plastic or glass container, pour wine mixture over meat, and cover. Marinate overnight in refrigerator.

    Preheat oven to 325 degrees F (165 degrees C).

    Transfer meat to a Dutch oven. Make eight to ten 1 inch deep cuts into the meat with a sharp knife. Insert a whole peeled garlic clove into each hole. Pour marinade over meat, and cover.

    Roast for 35 minutes per pound, or until an instant read thermometer inserted into the center of the roast registers 160 degrees F (70 degrees C).

  • Shrimp with Mustard Sauce

    Ingredients

    1/4 cup finely chopped onion
    2 garlic cloves, minced
    2 teaspoons olive oil
    1/4 cup white wine, apple juice or water
    2 tablespoons Dijon mustard
    1/8 teaspoon pepper
    3/4 pound uncooked medium shrimp, peeled and deveined
    1 small tomato, seeded and diced

    Directions

    In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the wine or apple juice, mustard and pepper. Bring to a boil. Reduce heat to medium-low. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Stir in tomato; heat through.
