  • Recipe For Beef Caldo with Spinach

    Ingredients

    vegetable oil for browning
    1 pound beef round, thinly sliced then cut into 1 inch pieces
    1 medium onion, diced
    6 roma (plum) tomatoes, chopped
    4 new potatoes, quartered
    2 cups tomato puree
    1 bunch fresh spinach, rinsed and torn into bite-size pieces
    1/2 cup red wine
    3 cloves garlic, minced
    2 tablespoons chopped fresh oregano
    1 (14.5 ounce) can beef broth

    Directions

    Heat oil in a medium skillet over medium-high heat. Cook and stir meat until well browned on all sides, then transfer to a large stock pot. Cook and stir onions in the same skillet in the fat remaining from the meat. When lightly browned and tender, stir in tomatoes. Continue cooking until some of the tomato liquid has evaporated, then transfer to the stock pot with the meat.

    In a separate skillet, brown the potatoes in a small amount of oil over medium-high heat, turning occasionally. Add the potatoes to the meat, along with the tomato puree, spinach, red wine, garlic, and oregano. Add just enough beef broth or water to cover meat and vegetables, and bring to a boil. Reduce heat to a simmer, cover, and cook for one hour.

  • Scallop and Chorizo Pasta Recipe

    Ingredients

    1 (8 ounce) package uncooked linguine pasta
    4 teaspoons olive oil, divided
    6 ounces chorizo sausage, cut into chunks
    1 pound scallops
    salt and ground black pepper to taste
    cayenne pepper to taste
    1 green bell pepper, julienned
    1 red bell pepper, julienned
    1 yellow bell pepper, julienned
    1 tablespoon minced garlic
    1/3 cup dry white wine
    1 cup clam juice

    Directions

    Bring a large pot of lightly salted water to a boil, and cook the linguine 8 to 10 minutes or until al dente; drain.

    Heat 1 teaspoon olive oil in a skillet over high heat, and cook and stir the chorizo sausage 2-3 minutes, until evenly browned. Set aside the sausage, and wipe the skillet. Heat 1 teaspoon olive oil, and toss in the scallops. Season with salt, pepper, and cayenne, and cook and stir about 3 minutes, until opaque and lightly browned. Set aside. Wipe the skillet, and heat another 1 teaspoon olive oil over medium heat. Cook and stir the green bell pepper, red bell pepper, and yellow bell pepper until tender. Remove from heat, and set aside.

    Heat the remaining olive oil in the skillet over medium high heat, and cook and stir the garlic until tender. Pour in the wine, and bring to a boil. Cook until most of the wine has been reduced, and scrape the browned bits from the bottom of the skillet. Mix in the clam juice, bring to a boil, and cook until reduced by about 1/2. Return the chorizo, scallops, and peppers to the skillet, and toss until coated. Serve over the cooked linguine.

    Ingredients

    2 (14.5 ounce) cans stewed tomatoes
    1 (6 ounce) can tomato paste
    4 tablespoons chopped fresh parsley
    1 clove garlic, minced
    1 teaspoon dried oregano
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    6 tablespoons olive oil
    1/3 cup finely diced onion
    1/2 cup white wine

    Directions

    In a food processor place Italian tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.

    In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.

    Simmer for 30 minutes, stirring occasionally.

  • Recipe For Parmesan Crusted Salmon

    Ingredients

    1/2 cup Parmesan cheese
    1 cup Italian seasoned bread crumbs
    1 teaspoon dried tarragon
    1 teaspoon dill weed
    1 cup white wine
    1/4 cup teriyaki sauce
    1 tablespoon melted butter
    1/4 cup chopped red onion
    1 tablespoon minced garlic
    2 pounds salmon steaks

    Directions

    In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.

    In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.

    Press one side of each salmon steak into the Parmesan cheese mixture. Place steaks crust side up in saucepan with white wine mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.
