  • Slow-Cooked German Short Ribs Recipe

    Ingredients

    2 tablespoons all-purpose flour
    1 teaspoon salt
    1/8 teaspoon ground black pepper
    3 pounds beef short ribs
    2 tablespoons olive oil
    1 slice onion, sliced
    1/2 cup dry red wine
    1/2 cup chile sauce
    3 tablespoons packed brown sugar
    3 tablespoons vinegar
    1 tablespoon Worcestershire sauce
    1/2 teaspoon dry mustard
    1/2 teaspoon chili powder
    2 tablespoons all-purpose flour
    1/4 cup water

    Directions

    In a small bowl, combine 2 tablespoons flour, salt, and pepper. Coat the short ribs with the flour mixture.

    In a large skillet, heat the olive oil over medium-high heat. Brown short ribs in olive oil.

    In a slow cooker, combine onions, wine, chili sauce, brown sugar, vinegar, Worcestershire sauce, mustard, and chili powder. Mix thoroughly. Transfer the short ribs from the skillet to the slow cooker.

    Cover, and cook on Low for 6 to 8 hours.

    Remove ribs, and turn the slow cooker control to High. Mix the remaining 2 tablespoons of flour with 1/4 cup water, and stir into the sauce. Cook for 10 minutes, or until slightly thickened.

    Ingredients

    1 pound country style pork ribs
    salt and pepper to taste
    1/4 cup dry white wine (optional)
    1/2 cup water
    1 tablespoon caraway seed
    1 tablespoon brown sugar
    1 pound sauerkraut, drained
    1 medium red apple – cored and diced
    1 pound carrots, peeled and cut into large chunks

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Season ribs with salt and pepper. Heat 1 teaspoon oil in a large skillet over medium high heat. Cook ribs, turning occasionally, until well browned on all sides. Add wine (if using), water, caraway seeds, and brown sugar; stir to dissolve sugar. Stir in drained sauerkraut, apple, and carrots, and transfer to a large casserole dish.

    Bake, covered, in the preheated oven for 2 1/2 hours, adding water as needed to prevent drying out.

  • Black Beans ‘N’ Rice Recipe

    Ingredients

    1 pound black beans, washed
    7 cups water
    1 cup diced fully cooked lean ham
    5 cloves garlic, minced
    1 1/4 teaspoons pepper
    1 1/4 teaspoons ground cumin
    1 teaspoon salt
    1 bay leaf
    1/2 teaspoon liquid smoke (optional)
    4 cups chicken broth
    2 cups uncooked long grain rice
    1 tablespoon red wine vinegar or cider vinegar
    2 teaspoons olive or canola oil
    3/4 cup shredded reduced-fat Cheddar cheese
    3/4 cup chopped sweet red pepper
    2 tablespoons chopped jalapeno peppers*

    Directions

    Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding liquid.

    Return to the pan. Add 7 cups water, ham, garlic, pepper, cumin, salt, bay leaf and liquid smoke if desired. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beans are tender. Meanwhile, in a saucepan, bring broth and rice to a boil. Reduce heat; cover and simmer for 20 minutes or until rice is tender.

    Just before serving, discard bay leaf from bean mixture; add vinegar and oil. Serve over rice. Sprinkle each serving with 1 tablespoon cheese, 1 tablespoon red pepper and 1 teaspoon jalapenos.
