  • How To Make Fruit-Infused Teriyaki Sauce

    Ingredients

    3 cups soy sauce
    1 1/2 cups mirin (Japanese sweet wine)
    1 orange, juiced
    6 ounces chopped fresh pineapple with skin
    1 Granny Smith apple, cored and chopped
    2 cloves garlic
    1 teaspoon grated fresh ginger root
    4 tablespoons SPLENDA(r) No Calorie Sweetener, Granulated

    Directions

    In a saucepan, combine soy sauce, mirin, orange juice, pineapple, Granny Smith apple, garlic, ginger, and half of the SPLENDA(r) Granulated Sweetener; bring to a boil. Reduce heat, and simmer 20 minutes. Adjust sweetness to taste with remaining SPLENDA(r) Granulated Sweetener. Strain through a fine mesh sieve; cool.

  • Almond-Crusted Halibut Crystal Symphony

    Ingredients

    1/3 cup dry white wine
    2 tablespoons cider vinegar
    2 tablespoons minced shallots
    1 sprig fresh thyme
    1 bay leaf
    1/3 cup heavy cream
    10 tablespoons unsalted butter – chilled, cut into tablespoon-size pieces
    3 tablespoons chopped fresh chives
    2 teaspoons fresh lemon juice
    salt and pepper to taste
    6 (6 ounce) fillets halibut
    2 tablespoons vegetable oil
    1 tablespoon unsalted butter
    1/4 cup fresh bread crumbs
    2/3 cup minced blanched almonds
    1 tablespoon unsalted butter, melted
    1 egg, lightly beaten

    Directions

    Make beurre blanc: In a small saucepan over medium heat, combine wine, vinegar, shallots, thyme and bay leaf. Boil until liquid has evaporated. Stir in cream, and boil until liquid is reduced by half; decrease heat to low. Whisk in butter, 1 piece at a time, adding each new piece before previous one has melted completely. Do not allow sauce to simmer, or it may separate.

    Strain sauce through a fine sieve into a heatproof bowl. Stir in chives, lemon juice, salt and pepper. Keep warm by setting bowl in a larger container of hot water.

    Preheat oven on broiler setting. Pat fillets dry, and season with salt and pepper.

    Heat oil and 1 tablespoon butter in a large skillet over medium-high heat. Saute halibut fillets for 2 to 3 minutes on each side, or until lightly browned, and just cooked through. Transfer to a baking sheet, and cool 5 minutes. In a small bowl, stir together bread crumbs, almonds and 1 tablespoon melted butter. Brush tops of fillets with egg, and spread with almond mixture.

    Broil fillets 1 to 2 minutes, or until browned (watch closely – every broiler has its own personality!). Place fillets on individual plates, and spoon beurre blanc around it.

  • Turkey Rice Casserole

    Ingredients

    4 cups chicken broth
    1/4 cup uncooked wild rice
    1 3/4 cups uncooked long grain rice
    2 cups sliced fresh mushrooms
    1/2 cup fresh broccoli florets
    1 small onion, chopped
    1/4 cup grated carrot
    1/4 cup sliced celery
    2 tablespoons olive or vegetable oil
    5 cups cubed cooked turkey
    1 (2 ounce) jar diced pimientos, drained
    1 teaspoon salt
    1/2 teaspoon dried marjoram
    1/2 teaspoon dried oregano
    5 tablespoons all-purpose flour
    3 cups milk
    1/4 cup white wine or chicken broth
    2 cups shredded Swiss cheese
    2 cups shredded Cheddar cheese, divided

    Directions

    In a large saucepan, bring broth to a boil; add the wild rice. Cover and simmer for 25 minutes. Add the long grain rice; simmer 25 minutes longer or until tender.

    In a large skillet, saute the mushrooms, broccoli, onion, carrot and celery in oil until tender. Add the turkey, pimientos, salt, marjoram and oregano. Stir in the rice.

    In a large saucepan, combine the flour, milk and wine or broth until smooth. bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the Swiss cheese and 1 cup cheddar cheese until melted. Add to turkey mixture.

    Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with the remaining cheddar cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through.

    Ingredients

    6 tablespoons rice wine vinegar
    6 tablespoons vegetable oil
    5 tablespoons creamy peanut butter
    3 tablespoons soy sauce
    3 tablespoons brown sugar
    2 tablespoons minced fresh ginger root
    1 1/2 tablespoons minced garlic
