  • Recipe For Thai Peanut Chicken

    Ingredients

    2 cups uncooked white rice
    4 cups water
    3 tablespoons soy sauce
    2 tablespoons creamy peanut butter
    2 teaspoons white wine vinegar
    1/4 teaspoon cayenne pepper
    3 tablespoons olive oil
    4 skinless, boneless chicken breast halves – cut into thin strips
    3 tablespoons chopped garlic
    1 1/2 tablespoons chopped fresh ginger root
    3/4 cup chopped green onions
    2 1/2 cups broccoli florets
    1/3 cup unsalted dry-roasted peanuts

    Directions

    Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.

    Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.

    Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture. Cook, stirring frequently, for 5 minutes, or until broccoli is tender, and chicken is cooked through. Serve over rice.

  • How To Make Caesar Vinaigrette

    Ingredients

    2 tablespoons white wine vinegar
    1 tablespoon Dijon mustard
    1 tablespoon balsamic vinegar
    1 teaspoon lemon zest
    1 teaspoon white sugar
    1/2 teaspoon Italian seasoning
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    2/3 cup olive oil
    1 clove garlic, minced
    1/2 cup freshly shredded Parmesan cheese

    Directions

    Stir the white wine vinegar, Dijon mustard, balsamic vinegar, lemon zest, sugar, Italian seasoning, salt, and black pepper together in a bowl. Gradually whisk in the olive oil to make an emulsion, or thickened vinaigrette mixture. Stir in the garlic. Add the Parmesan cheese just before serving.

  • Recipe For Five-Vegetable Medley

    Ingredients

    2 medium parsnips, peeled and julienned
    2 medium carrots, julienned
    2 ribs celery, julienned
    1 small turnip, peeled and julienned
    2 tablespoons butter
    1 medium sweet red pepper, julienned
    1/2 cup white wine or chicken broth

    Directions

    In a large skillet, saute the parsnips, carrots, celery and turnip in butter for 5 minutes. Add red pepper; cook and stir 1 minute longer. Add wine or broth. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until vegetables are tender. Serve with a slotted spoon.

  • Deluxe French Beef Stew

    Ingredients

    3 slices bacon
    2 pounds beef stew meat
    1 cup dry red wine
    1 cube beef bouillon
    1 cup boiling water
    2 cloves garlic, crushed
    1 tablespoon dried minced onion
    2 teaspoons salt
    1/4 teaspoon dried thyme
    strip of orange peel
    2 tablespoons cornstarch
    2 tablespoons cold water
    1 1/2 cups pickled pearl onions, drained
    3/4 pound fresh button mushrooms, halved
    1/2 cup pitted black olives
    1 (10 ounce) package frozen green peas, thawed and drained

    Directions

    Place bacon strips in a stock pot or Dutch oven over medium heat. Cook until browned and crisp. Set bacon aside, and brown the beef cubes in bacon fat. Gradually stir in the wine, scraping up any browned bits as you stir. Dissolve the bouillon cube in boiling water, and pour into the pan. Add garlic, thyme, minced onion, salt and orange peel. Reduce heat to low, cover, and simmer for one hour, until meat is tender.

    Dissolve cornstarch in cold water, and pour into the soup. When soup has thickened, add the peas, onions, olives and mushrooms. Cook until heated through, and serve.
