  • Halibut with Rice Wine

    Ingredients

    1 teaspoon vegetable oil
    1 shallots, finely chopped
    2 cloves garlic, finely chopped
    1 tablespoon black bean sauce
    1/2 cup mirin (Japanese sweet wine)
    1 tablespoon soy sauce
    1 tablespoon rice vinegar
    6 (4 ounce) fillets halibut, skin removed
    1 teaspoon sesame oil
    1/4 teaspoon pepper
    2 tablespoons chopped fresh cilantro

    Directions

    Heat oil in non-stick saucepan over medium heat. Cook shallots and garlic gently until fragrant, but not brown. Stir in black bean sauce, rice wine, and soy sauce. Bring to boil and cook until reduced by half. Remove from heat, and stir in vinegar; set aside.

    Pat fish dry. Rub with sesame oil and sprinkle with pepper. Preheat an outdoor grill for high heat, and lightly oil grate.

    Grill fish for about 5 minutes per side, or just until cooked through. Sprinkle with cilantro. Serve with sauce poured over top.

  • Recipe For Cornish Game Hens with Garlic and Rosemary

    Ingredients

    4 Cornish game hens
    salt and pepper to taste
    1 lemon, quartered
    4 sprigs fresh rosemary
    3 tablespoons olive oil
    24 cloves garlic
    1/3 cup white wine
    1/3 cup low-sodium chicken broth
    4 sprigs fresh rosemary, for garnish

    Directions

    Preheat oven to 450 degrees F (230 degrees C).

    Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.

    Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.

    Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

    Ingredients

    2 tablespoons white wine vinegar
    1 lime, juiced
    2 cloves garlic, minced
    1 teaspoon salt
    1/2 teaspoon pepper
    1 (3 pound) fryer or boiler chicken, cut into pieces
    2 tablespoons olive oil
    1 green bell pepper, thinly sliced
    1 medium onion, thinly sliced
    2 tomatoes, thinly sliced
    2 tablespoons ketchup

    Directions

    In a large bowl, mix the vinegar, lime juice, garlic, salt, and pepper. Place the chicken pieces in the mixture, and marinate at least 15 minutes.

    Heat the oil in a large skillet over medium heat. Transfer the chicken and marinade to the skillet. Cover, and cook chicken about 10 minutes.

    Mix the green pepper, onion, tomatoes, and ketchup into the skillet, cover, and continue cooking 15 to 20 minutes, until chicken is no longer pink and juices run clear.

  • Scrumptious Shrimp Scampi Linguine Recipe

    Ingredients

    1 (16 ounce) package linguine pasta
    2 tablespoons butter
    1 1/2 tablespoons olive oil
    1/2 cup chopped red bell pepper
    1/2 cup chopped yellow bell pepper
    6 cloves garlic, sliced
    48 large shrimp – peeled, deveined, and tails removed
    1/2 cup dry white wine (such as Chardonnay)
    1 teaspoon lemon juice
    1/4 cup clam juice
    2 tablespoons butter
    1 1/2 tablespoons olive oil
    2 tablespoons heavy cream
    1 1/2 teaspoons crushed red pepper flakes, or to taste
    3 tablespoons chopped fresh parsley
    1 teaspoon sea salt

    Directions

    Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Reserve 1 cup of the linguine cooking water, and drain pasta well in a colander set in the sink.

    Melt 2 tablespoons of butter and 1 1/2 tablespoon of olive oil together in a large skillet over medium heat, and cook and stir the red and yellow bell pepper and garlic until the peppers have softened, about 10 minutes. Stir in the shrimp, and cook and stir until the shrimp are opaque and pink, about 5 minutes. Remove the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.

    Stir the wine, lemon juice, and clam juice into the skillet, and bring to a boil over medium heat. Mix in 2 more tablespoons of butter and 1 1/2 tablespoons of olive oil, and return the shrimp to the skillet. Stir in reserved pasta cooking water, cream, red pepper flakes, parsley, and sea salt. Add the cooked linguine, and toss lightly with the shrimp and sauce in the skillet. Simmer the mixture over medium-low heat for 5 minutes to let the pasta absorb some of the sauce, and serve hot.
