  • Chicken Veronica Recipe

    Ingredients

    1/4 cup extra-virgin olive oil
    2 1/2 pounds chicken breast cutlets, pounded to 1/4 inch thickness
    1 cup all-purpose flour for dusting
    4 cloves garlic, chopped
    1 shallot, chopped
    3 tablespoons chopped oil-packed sun-dried tomatoes
    3 slices pancetta bacon, finely chopped
    3/4 cup good quality dry sherry wine
    1/2 cup chicken stock
    2 egg yolks
    1/2 cup heavy cream
    2 tablespoons Brie cheese – rind removed, room temperature
    salt and pepper to taste
    1 teaspoon chopped fresh parsley

    Directions

    Heat the olive oil in a large skillet over medium-high heat. Dredge the chicken in flour, shaking off any excess. Fry chicken in the hot oil until brown on both sides. Remove from the skillet and set aside.

    Add the garlic, shallot, sun-dried tomatoes and pancetta to the skillet and reduce the heat to medium. Cook and stir for a few minutes, until garlic is fragrant and pancetta is cooked. Stir in the sherry, loosening any bits stuck to the bottom of the pan. Simmer until reduced by half. Stir in the chicken stock and cook until reduced by half again.

    Whisk together the egg yolks and heavy cream; mix into the skillet. Season with salt and pepper. Return the chicken to the skillet and cook for a few minutes, until chicken is coated and sauce is thick. Stir in the Brie cheese until smooth. Remove from the heat and sprinkle with parsley. Serve over rice or angel hair pasta.

  • Recipe For Angel Chicken Pasta

    Ingredients

    6 skinless, boneless chicken breast halves
    1/4 cup butter
    1 (.7 ounce) package dry Italian-style salad dressing mix
    1/2 cup white wine
    1 (10.75 ounce) can condensed golden mushroom soup
    4 ounces cream cheese with chives
    1 pound angel hair pasta

    Directions

    Preheat oven to 325 degrees F (165 degrees C).

    In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9×13 inch baking dish. Pour sauce over.

    Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

  • Calimocho (Kalimotxo)

    Ingredients

    1 1/4 liters cola-flavored carbonated beverage
    1 (750 milliliter) bottle red wine

    Directions

    In a 1 gallon serving jar with a lid or in the 2 liter bottle from the cola, combine the cola and red wine. Put the lid on and gently rock the container to mix. Let rest for a few minutes before serving in glasses over ice.

  • Turkey with Mushroom Sauce Recipe

    Ingredients

    1 (3 pound) boneless turkey breast, halved
    2 tablespoons butter or margarine, melted
    2 tablespoons dried parsley flakes
    1/2 teaspoon dried tarragon
    1/2 teaspoon salt (optional)
    1/8 teaspoon pepper
    1 (4.5 ounce) jar sliced mushrooms, drained
    1/2 cup white wine or chicken broth
    2 tablespoons cornstarch
    1/4 cup cold water

    Directions

    Place the turkey, skin side up, in a slow cooker. Brush with butter. Sprinkle with parsley, tarragon, salt if desired and pepper. Top with mushrooms. Pour wine or broth over all.

    Cover and cook on low for 7-8 hours.

    Remove turkey and keep warm. Skim fat from cooking juices.

    In a saucepan, combine cornstarch and water until smooth. Gradually add cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the turkey.
