  • Flank Steak with Garlic Wine Sauce Recipe

    Ingredients

    1 medium head garlic
    1 1/2 pounds flank steak
    salt to taste
    2 teaspoons freshly ground black pepper
    4 tablespoons butter
    1/4 cup chopped green onions
    1 cup dry red wine

    Directions

    Cut head of garlic in half, place on a square of foil, and drizzle with olive oil. Wrap. Bake at 400 degrees F (200 degrees C) for 45 minutes. Squeeze roasted garlic cloves out of skins, and mash into a puree. Set aside.

    Sprinkle steak with salt and a generous amount of freshly ground pepper. Heat a large heavy skillet over medium high heat, but do not add fat. When hot, cook seasoned steak until seared and well browned on both sides, about a minute per side. Reduce heat to medium, and add 2 tablespoons of the butter. Continue to cook for 3 to 5 minutes on each side. Remove meat, and keep warm.

    Pour off the fat in the skillet, and add the scallions and red wine. Bring to a boil, and whisk in the garlic puree. Boil until the wine is reduced by half, and is thick and syrupy. As it boils, scrape up browned bits with a wooden spoon. Stir in the meat juices that have accumulated under the steak. Boil for another second or so. Remove from the heat, and stir in the remaining 2 tablespoons of butter until it is incorporated into the wine sauce.

    Quickly slice the meat against the grain, into thin strips. Arrange on a hot platter, and pour the sauce down the center of the slices. Serve at once.

  • How To Make Spring Risotto

    Ingredients

    3 tablespoons olive oil
    3 tablespoons butter
    1 bulb fennel, diced
    1 small red bell pepper, diced
    1 onion, diced
    3 cloves garlic, minced
    2 teaspoons grated lemon zest
    3 tablespoons chopped fresh mint leaves
    3 tablespoons chopped fresh parsley
    2 tablespoons chopped fresh rosemary
    1/2 teaspoon ground coriander
    1 1/2 cups uncooked Arborio rice
    1/2 cup dry white wine
    3 1/2 cups vegetable broth
    2 tablespoons fresh lemon juice
    1/3 cup grated Parmesan cheese
    salt and pepper to taste

    Directions

    Heat oil and butter in a medium-size heavy saucepan over medium heat. Stir in fennel, red pepper, onion, and garlic. In a small bowl, mix together lemon zest, mint, parsley, and rosemary. Stir half of this herb mixture into saucepan, and set the rest aside. Saute vegetables until slightly softened, 3 to 4 minutes.

    Stir in coriander and rice. Cook, stirring frequently, until rice grains are thoroughly coated with oil and butter. Stir in wine, then reduce heat to low. Stir in about 1 cup of vegetable broth. Continue to stir while ladling in more broth as needed; rice should have a thin veil of broth over it at all times. Cook for 20 to 25 minutes, until all broth is used and absorbed, and rice is tender.

    Remove pan from heat and stir in remaining herb mixture, lemon juice and Parmesan cheese. Season to taste with salt and pepper. Cover pan loosely with waxed paper and allow to stand 8 to 10 minutes before serving.

  • How To Make Spicy Barbados Pepper Sauce

    Ingredients

    1 chopped red onion
    1 cup chopped red bell pepper
    3 Scotch bonnet chile peppers, chopped
    1 large papaya – peeled, seeded and cubed
    1 head garlic, peeled
    2 tablespoons dry mustard powder
    2 cups white sugar
    3 cups dry white wine
    1 cup malt vinegar
    1 cup water
    1/2 cup lemon juice
    2 cups prepared yellow mustard

    Directions

    Place the onion, red pepper, Scotch bonnet chiles, papaya, and garlic in a food processor. Pulse until finely chopped. Scrape into a large pot, and stir in the mustard powder, sugar, wine, vinegar, water, and lemon juice.

    Bring to a simmer, then reduce heat to medium-low, and continue simmering, stirring frequently until the mixture has thickened, about 1 hour. Once thick, remove from the heat, and stir in the yellow mustard.

  • How To Make Chicken Scarpariello

    Ingredients

    1 1/4 pounds skinless, boneless chicken breast halves
    3 tablespoons all-purpose flour
    2 tablespoons olive oil
    2 teaspoons butter
    2 tablespoons shallots, minced
    2 cloves garlic, minced
    1 cup water
    1/2 cup white wine
    1 cube chicken bouillon
    1/2 teaspoon dried rosemary, crushed
    1/4 teaspoon salt
    1 pinch ground black pepper

    Directions

    Cut chicken breasts into 1 x 3 inch strips, and dredge in flour.

    In 10 inch skillet, heat oil and butter. Add chicken. Cook, turning occasionally, until lightly browned on all sides (3 to 4 minutes). Using tongs, remove chicken from skillet. Set aside and keep warm.

    To same skillet, add shallots and garlic. Saute until softened (1 minute). Add water, wine, broth mix, and seasonings. Mix well. Cook, stirring frequently, until liquid is reduced by 1/2 (3 to 4 minutes). Return chicken to skillet, and cook until sauce is thick and chicken is heated through (2 to 3 minutes).
