  • Recipe For Greek Lamb-Feta Burgers With Cucumber Sauce

    Ingredients

    4 large unpeeled garlic cloves
    1 1/4 pounds ground lamb
    1/2 cup crumbled feta cheese
    3/4 teaspoon dried oregano
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 large cucumber, peeled, grated and squeezed very dry in a clean towel
    3/4 cup sour cream
    1 tablespoon minced fresh mint leaves
    1 teaspoon red or rice wine vinegar
    1 clove garlic, minced
    4 large, thin tomato slices
    4 large, thin tomato slices
    4 small (4 inch) pita breads

    Directions

    Set 4 whole garlic cloves in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.

    Break up lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat; stir with a fork to combine. Divide into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 inches wide. Refrigerate.

    Mix cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.

    Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 4 to 5 minutes per side for medium to medium-well burgers.

    Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.

  • Southern Style French Onion Soup

    Ingredients

    4 tablespoons butter
    1 onion, sliced
    1/2 teaspoon dried thyme
    5 (10.5 ounce) cans beef consomme
    6 bay leaves
    1/2 cup white wine (optional)
    1 French baguette, cut into 1/2 inch slices
    2 cups shredded mozzarella cheese

    Directions

    Preheat oven to 375 degrees F (190 degrees C).

    Melt the butter in a large skillet over medium high heat. Place the onion in the butter and saute for 5 to 10 minutes, or until tender. Stir in the thyme and remove from heat.

    In a large pot over high heat, combine the consomme, bay leaves and white wine, if desired. Bring to a boil, reduce heat to low, stir in the sauteed onions and allow to heat through, about 10 to 15 minutes.

    Ladle soup into 4 individual oven-safe bowls, filling each about 3/4 of the way. Top each bowl with 2 slices of baguette bread and then cover each with the cheese.

    Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly.

  • Recipe For Gorgonzola and Wild Mushroom Risotto

    Ingredients

    2 ounces dried chanterelle mushrooms
    1 1/2 teaspoons butter
    1 teaspoon truffle oil (optional)
    1 chopped onion
    2 shallots, minced
    1 clove garlic, minced
    3 ounces sliced fresh button mushrooms
    1 (12 ounce) package Arborio rice
    1/2 cup dry white wine
    1 quart hot chicken stock
    2 tablespoons heavy cream
    2 tablespoons crumbled Gorgonzola cheese, or to taste
    ground black pepper to taste

    Directions

    Cover chanterelle mushrooms with hot water, cover, and set aside to soften for 30 minutes. Once soft, remove the mushrooms from the water and chop; discard water.

    Melt butter along with truffle oil in a large saucepan over medium-high heat. Add the onion, shallot, and garlic; cook and stir two minutes until the onion begins to soften. Add the fresh mushrooms, and continue cooking until the mushroom softens and begins to release its liquid. Stir in the chopped chanterelle mushrooms, and cook 3 minutes more.

    Add Arborio rice; cook and stir for a few minutes until the rice is well coated with the onion mixture and looks glossy. Stir in the white wine, and cook until nearly evaporated.

    Reduce heat to medium, and add 1/3 of the hot chicken stock. Cook and stir until the chicken stock has been mostly absorbed, about 5 minutes. The risotto should be simmering gently while you stir in the chicken stock. Add half of the remaining stock, and stir for 5 minutes more. Finally add the remaining stock, and continue cooking until the risotto is creamy and the rice is tender, about 5 minutes more. The rice should not be completely soft, but still have a little firmness when you bite into it. You can add a little water if needed to cook the rice to this state.

    Remove the risotto from the heat, and stir in the heavy cream and Gorgonzola cheese. Season to taste with salt and pepper, and serve.

  • How To Make Summer Salmon Skewers

    Ingredients

    2 (6 ounce) skinless salmon fillets, about 1-inch thick, cut into 2-inch strips
    1/3 cup lemon juice
    1/4 cup white wine
    1 tablespoon chopped fresh mint
    1 tablespoon chopped fresh dill
    2 tablespoons chopped fresh parsley
    2 tablespoons minced garlic
    1 pinch crushed red pepper flakes
    1/4 cup olive oil

    Directions

    Preheat grill for medium-low heat.

    Lie the salmon in the bottom of a baking dish. Whisk together the lemon juice, wine, mint, dill, parsley, garlic, and red pepper flakes in a bowl. Slowly drizzle in the olive oil while whisking vigorously. Pour the mixture over the salmon. Marinate the salmon in the refrigerator for no more than 30 minutes.

    Thread the salmon onto metal or soaked wooden skewers lengthwise. Cook on preheated grill until opaque in the center, about 4 minutes per side. Serve immediately.
