  • Recipe For Award Winning Chili

    Ingredients

    1 (14.5 ounce) can stewed tomatoes, chopped
    1 (6 ounce) can tomato paste
    1 carrot, sliced
    1 onion, chopped
    2 stalks celery, chopped
    1/4 cup white wine
    1 pinch crushed red pepper flakes
    1/4 cup chopped green bell pepper
    1/4 cup chopped red bell pepper
    1/3 cup bottled steak sauce
    5 slices bacon
    1 1/2 pounds ground beef
    1 (1.25 ounce) package chili seasoning mix
    1 teaspoon ground cumin
    1 (15 ounce) can kidney beans, drained
    1 tablespoon chopped fresh cilantro
    1 tablespoon chopped fresh parsley

    Directions

    In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.

    While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.

    Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.

    Stir in beans, cilantro and parsley. Heat through and serve.

  • Sweet Pickled Eggs Recipe

    Ingredients

    12 eggs
    1 large onion, sliced into rings
    2 cups white wine vinegar
    2 cups water
    1/2 cup white sugar
    1 teaspoon salt
    1 tablespoon pickling spice, wrapped in cheesecloth

    Directions

    Cover eggs with water in a large pot. Cover with lid. Bring to a boil over medium-high heat. Boil gently for 10 minutes. Drain. Run cold water over eggs until they are cold. Shell eggs.

    Prepare the brine in a sauce pan by combining the vinegar, water, sugar and salt. Stir over medium heat until sugar is dissolved.

    Layer the eggs (whole) and onion rings in a sterilized 2 quart jar to within 1 inch of the top.

    Add pickling spice to brine. Swirl bag around for 30 seconds. Remove bag. Pour brine over eggs to fill jar with 1/4 inch from top. Seal with a sterilized lid. Store in the refrigerator for 1 to 2 weeks before serving. Serve chilled.

  • How To Make Lance’s French Onion Soup

    Ingredients

    5 onions, thinly sliced
    6 cups beef broth
    2 tablespoons vegetable oil
    3 tablespoons butter or margarine
    1 pound shredded Swiss cheese
    1 teaspoon white sugar
    1/2 cup white wine
    salt and pepper to taste
    1 (1 pound) loaf French bread, sliced

    Directions

    In a medium stock pot, heat beef broth over medium-high heat.

    In a saute pan, add butter and oil and cook over medium-high heat. Once heated, add onions and stir, until onions are tender and transparent. Stir in sugar.

    Add onions to heated broth, stir and let simmer for 20 minutes.

    Add wine and season with salt and pepper, simmer for 10 minutes.

    Pour soup mixture into individual serving bowls and place a slice of bread on top, making sure bread gets well soaked. Place shredded cheese on top of bread and broil, 3 inches below heat, until cheese bubbles.

  • Different Chicken Cordon Bleu Recipe

    Ingredients

    8 skinless, boneless chicken breast halves
    8 slices ham
    8 slices Swiss cheese
    1 (10.75 ounce) can condensed cream of chicken soup
    1 cup sour cream
    1/2 cup white wine
    1 teaspoon garlic powder
    1 teaspoon dried parsley
    1 teaspoon salt
    1 teaspoon ground black pepper
    1 (6 ounce) package herb-seasoned dry bread stuffing mix

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Place chicken breasts in a lightly greased 9×13 inch baking dish. Lay a ham slice, then a cheese slice on top of each breast.

    In a medium bowl combine the soup, sour cream, wine, garlic powder, parsley, salt and pepper. Mix well and pour mixture over chicken/ham/cheese pieces. Top all with the dry stuffing mix to cover.

    Bake at 350 degrees F (175 degrees C) for about 30 minutes, or until chicken is cooked through and juices run clear.
