  • How To Make Pork Tenderloin with Apples

    Ingredients

    1 tablespoon olive oil
    1 pork tenderloin, cut in half
    salt and pepper to taste
    1/2 cup Riesling wine
    2 apples – peeled, cored and chopped
    1/2 cup chicken stock
    1 tablespoon apple cider vinegar
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 1/2 teaspoons packed brown sugar
    1/2 teaspoon cornstarch dissolved in
    2 tablespoons water

    Directions

    Heat the olive oil in a skillet over medium-high heat. Season the pork tenderloin halves with salt and pepper to taste, then cook in the hot oil until evenly browned on all sides, about 8 minutes. Reduce the heat to medium-low, and cook until the pork is no longer pink in the center, turning occasionally, about 25 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Place the pork onto a plate, cover with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes.

    While the pork is resting, pour the wine into the pan; bring to a simmer while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Simmer for 2 minutes, then add the apples, chicken stock, vinegar, cinnamon, nutmeg, brown sugar, and nutmeg. Cook and stir until the apples are tender, about 10 minutes. Stir cornstarch mixture into the simmering sauce to thicken. Cook and stir 1 minute more until the sauce thickens and is no longer cloudy.

    Slice the pork tenderloin into 1/4 inch thick slices, and arrange on a serving platter. Pour the apple sauce over meat to serve.

  • Recipe For Italian Lamb Stew

    Ingredients

    2 tablespoons olive oil
    1 1/2 pounds boneless lamb shoulder, cut into 1-inch cubes
    salt and ground black pepper to taste
    5 cloves garlic, sliced thin
    1/2 cup red wine
    1/2 cup chicken broth
    4 cups peeled, chopped tomatoes
    1 teaspoon dried oregano
    1 bay leaf
    4 potatoes, peeled and cut into 1-inch pieces
    2 cups fresh green beans, trimmed
    1 red bell pepper, seeded and cut into 1-inch pieces
    2 small zucchini, sliced
    3 tablespoons chopped fresh parsley

    Directions

    Heat the olive oil in a Dutch oven or large, heavy-bottomed pot. Season the lamb with salt and pepper; cook in the hot oil until browned, 2 to 3 minutes. Add the garlic; cook and stir 1 minute. Pour the red wine and chicken broth into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pot with a wooden spoon. Reduce the heat to medium-low; add the tomatoes, oregano, and bay leaf to the pot. Simmer gently until the lamb is tender, about 45 minutes.

    Raise heat to medium-high. Add the potatoes, green beans, red pepper, and zucchini to the pot. Cook until the vegetables are tender, another 15 to 20 minutes. Sprinkle the parsley over the soup. Remove the bay leaf and season with salt and pepper before serving.

  • How To Make Blue Cheese and Head Cheese Vinaigrette

    Ingredients

    6 tablespoons finely chopped onion
    1 tablespoon finely chopped garlic
    1/4 cup prepared Dijon-style mustard
    2 tablespoons red wine vinegar
    1/2 cup olive oil
    1 pound blue cheese, crumbled
    1 pound head cheese, diced
    salt and pepper to taste

    Directions

    In a large serving bowl, mix together the onion, garlic, mustard, red wine vinegar, and olive oil until well blended. Add the blue cheese and head cheese; toss until well coated. Season with salt and pepper to taste. Chill until serving.

  • Chicken Liver and Pistachio Nut Pate

    Ingredients

    1/2 cup unsalted butter
    1 (1 ounce) envelope dry onion soup mix
    1/4 cup white wine
    1 pound chicken livers, rinsed and trimmed
    1/2 cup shelled pistachio nuts
    1 (8 ounce) package cream cheese
    1/4 cup water
    onion powder to taste
    garlic powder to taste

    Directions

    In a skillet, melt butter over medium heat. Mix in soup mix and white wine. Arrange chicken livers in pan, and cook until browned and cooked though.

    Place shelled pistachio nuts in food processor and pulse to grind. Add cream cheese and water; process until smooth. Add chicken livers, and process until smooth. Season to taste with onion and garlic powder. Chill.
