    Ingredients

    1 1/2 cups grape tomatoes, halved
    1 large spaghetti squash, halved and seeded
    1/3 cup water
    salt and ground black pepper to taste
    3 tablespoons olive oil, divided
    2 cloves garlic, minced
    1/2 teaspoon dried basil
    1/2 teaspoon Italian seasoning
    1 red onion, chopped
    1 green bell pepper, chopped
    1 baby eggplant, halved lengthwise and sliced crosswise
    1 carrots, sliced thin
    1/3 cup white wine

    Directions

    Preheat an oven to 350 degrees F (175 degrees C). Arrange the tomatoes on a baking sheet with the cut sides facing up.

    Roast the tomatoes in the preheated oven until cooked through and slightly browned on the underside, about 15 minutes.

    Place squash halves face down in glass baking dish with the water; cover with plastic wrap. Microwave on High for 8 minutes. Leave covered and set aside. Once the squash is cool enough to handle, scrape in strands into a large bowl with a fork; season with salt and pepper and toss with 1 tablespoon olive oil.

    Heat the remaining 2 tablespoons olive oil in a large skillet over medium-low heat; cook and stir the garlic, basil, and Italian seasoning in the oil until the garlic is softened, about 10 minutes. Add the onion, green bell pepper, eggplant, and carrot to the garlic; increase heat to medium. Continue cooking and stirring until the vegetables are nearly tender, 10 to 15 minutes. Mix the tomatoes and white wine into the vegetable mixture; cook another 2 to 3 minutes. Transfer the vegetables to the bowl with the spaghetti squash; gently toss together.

  • How To Make Honey Mustard Chicken with Pretzel Crust

    Ingredients

    cooking spray
    1 tablespoon red wine vinegar
    1 tablespoon prepared yellow mustard
    1 tablespoon spicy mustard
    1 tablespoon coarse-grained mustard
    1 tablespoon honey
    1 tablespoon vegetable oil
    4 skinless, boneless chicken breast halves
    4 cups salted pretzels

    1/2 cup mayonnaise
    2 tablespoons prepared yellow mustard
    3 tablespoons honey
    1/2 teaspoon salt

    Directions

    Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with foil and spray with cooking spray.

    In a bowl, mix together the red wine vinegar, 1 tablespoon yellow mustard, the spicy mustard, coarse-grained mustard, 1 tablespoon of honey, and the vegetable oil.

    Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/4 inch. Coat the chicken well with the mustard mixture.

    Place the pretzels into a resealable plastic zipper bag and roll the bag under a rolling pin to finely grind the pretzels. Place the coated chicken breasts, one at a time, into the bag, seal, and shake the bag to thoroughly coat each chicken breast with pretzel meal. Place the chicken breasts on the prepared baking sheet and spray each breast with cooking spray.

    Bake the chicken in the preheated oven until the coating is golden brown and the meat is no longer pink in the center, about 25 minutes. Flip the chicken after about 12 minutes of cooking to brown both sides.

    Mix together the mayonnaise, 2 tablespoons of yellow mustard, 3 tablespoons of honey, and salt in a bowl. Drizzle the honey-mustard sauce over the chicken to serve.

    Ingredients

    1/2 cup red wine vinegar
    2 teaspoons white sugar
    1/2 teaspoon black pepper
    1 teaspoon dried dill weed
    1/4 cup mayonnaise
    5 cucumbers, scored and thinly sliced
    1 stalk celery, thinly sliced
    1/2 red onion, chopped
    salt to taste

    Directions

    Stir together vinegar, sugar, pepper, and dill in a large bowl until the sugar has dissolved. Stir in the mayonnaise until smooth, then add cucumbers, celery, and red onion until evenly coated with the dressing. Cover and refrigerate at least 1 hour. Season to taste with salt and stir once again before serving.

    Ingredients

    1/2 cup reduced-sodium soy sauce
    1/2 cup rice wine vinegar
    3 tablespoons orange juice
    3 tablespoons canola oil
    1 tablespoon sesame oil
    2 garlic cloves, minced
    2 teaspoons ground ginger
    1 teaspoon peanut butter
    3/4 teaspoon salt
    1/2 teaspoon cayenne pepper
    12 ounces uncooked spaghetti
    1 cup fresh broccoli florets
    1 cup fresh or frozen snow peas, thawed
    1 cup julienned sweet red pepper
    1 cup julienned zucchini
    1/2 cup thinly sliced celery
    1 pound boneless beef sirloin steak, cooked and cut into thin strips
    2 tablespoons sesame seeds, toasted

    Directions

    For dressing, combine the first 10 ingredients in a blender; cover and process until blended. Cook spaghetti according to package directions; drain and place in a large bowl. Add the broccoli, peas, red pepper, zucchini, celery and cooked beef. Add dressing and toss to coat. Cover and refrigerate for at least 2 hours. Just before serving, sprinkle with sesame seeds.
