  • Recipe For Pickled Mushrooms

    Ingredients

    1/2 cup red wine vinegar
    1/2 cup water
    2 bay leaves
    2 tablespoons sugar
    1 1/2 teaspoons salt
    1 garlic clove, minced
    1 pound fresh mushrooms, quartered

    Directions

    In a saucepan over medium heat, combine the vinegar, water, bay leaves, sugar, salt and garlic. Add mushrooms. Bring to a boil; boil for 2 minutes. Cool slightly. Transfer to a bowl; cover and refrigerate for 8 hours or overnight. Discard bay leaves before serving.

  • Almond Mandarin Salad

    Ingredients

    1/2 pound bacon
    2 tablespoons white wine vinegar
    3 tablespoons honey
    1/2 teaspoon dry hot mustard
    1/2 teaspoon celery salt
    1/2 teaspoon ground paprika
    1/4 cup olive oil
    1 head red leaf lettuce, torn into bite-size pieces
    1 (15 ounce) can mandarin oranges, drained
    1 bunch green onion, diced
    3/4 cup slivered almonds

    Directions

    In a medium skillet over medium-high heat, cook bacon until evenly brown. Drain, cool, and crumble.

    To make the dressing, thoroughly blend the vinegar, honey, dry mustard, celery salt, paprika, and olive oil.

    Place lettuce, oranges, green onion, bacon, and almonds in a serving bowl. Toss with dressing and serve.

  • Recipe For Creamy Scallop Chowder

    Ingredients

    1 pound scallops, rinsed and drained
    2 tablespoons butter
    1 bunch green onion, minced
    4 ounces fresh mushrooms, sliced
    2 tablespoons all-purpose flour
    1 cup milk
    1/2 cup dry white wine
    1 teaspoon salt
    1 pinch ground white pepper
    1/2 cup shredded Swiss cheese
    2 tablespoons chopped fresh parsley

    Directions

    Wash and drain scallops. If scallops are large, cut in half. In a small stock pot, melt butter over medium-low heat. Saute onions and mushrooms until tender.

    Stir in flour. Pour in milk and stir over medium heat until thickened and bubbly. Add wine, scallops, salt and pepper. Cook over medium heat until thickened. Serve topped with Swiss cheese and parsley.

  • How To Make Department Store Onion Soup

    Ingredients

    1/2 cup butter
    5 pounds onions, thinly sliced
    1 1/2 teaspoons ground black pepper
    2 teaspoons salt
    2 tablespoons paprika
    1 bay leaf
    1/4 cup all-purpose flour
    3 quarts beef broth
    1 cup white wine (optional)
    1 dash browning sauce
    1 loaf French bread, cut into 1 inch slices
    2 cups shredded Swiss cheese

    Directions

    Melt the butter in a large pot over low heat. Add the onions; cook, stirring occasionally for 1 1/2 hours.

    When the onions are ready, add the pepper, salt, bay leaf and flour. Stir over low heat for 10 minutes. Pour in the beef broth and white wine. Simmer for 2 hours over low heat. Adjust the coloring to a rich brown with the browning sauce. Taste, and adjust salt if needed.

    Preheat your oven’s broiler. Ladle the soup into oven-proof bowls, and place them on a baking sheet. Float a slice of French bread in each bowl, and top with some Swiss cheese. Broil until cheese is browned. Serve immediately.
