    Ingredients

    6 skinless, boneless chicken breasts
    1 egg, lightly beaten
    1 tablespoon water
    1/2 cup dried bread crumbs
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/8 teaspoon garlic powder
    1/4 cup all-purpose flour
    2 tablespoons butter or margarine
    2 tablespoons vegetable oil
    2 tablespoons fresh lemon juice
    2 tablespoons dry white wine
    1 tablespoon chopped fresh parsley
    2 lemons – cut into wedges, for garnish

    Directions

    Flatten chicken to 1/4 inch thickness between plastic wrap or waxed paper. Mix egg and water. Mix bread crumbs, salt, pepper and garlic powder. Coat chicken with flour, dip into egg mixture and coat with bread crumb mixture.

    Heat butter or margarine and oil in 12 inch skillet over medium heat. Cook chicken for 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Remove chicken from skillet using tongs; keep warm.

    Stir lemon juice and wine into drippings in skillet. Heat to boiling; pour over chicken. Sprinkle with chopped fresh parsley, and serve with lemon wedges for garnish.

  • Roasted Pork Loin Recipe

    Ingredients

    3 cloves garlic, minced
    1 tablespoon dried rosemary
    salt and pepper to taste
    2 pounds boneless pork loin roast
    1/4 cup olive oil
    1/2 cup white wine

    Directions

    Preheat oven to 350 degrees F (175 degrees C).

    Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.

    Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 2 hours. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

    Ingredients

    3 (6.5 ounce) cans minced clams
    1 cup minced onion
    1 cup diced celery
    2 cups cubed potatoes
    1 cup diced carrots
    3/4 cup butter
    3/4 cup all-purpose flour
    1 quart half-and-half cream
    2 tablespoons red wine vinegar
    1 1/2 teaspoons salt
    ground black pepper to taste

    Directions

    Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.

    Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.

    Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

  • Citrus Scallops II

    Ingredients

    2 1/2 tablespoons olive oil
    1 pound bay scallops
    2 tablespoons all-purpose flour
    1 cup white wine
    1 tablespoon chopped onion
    1 tablespoon chopped green bell pepper
    1 1/2 tablespoons chopped fresh dill
    4 cherry tomatoes, quartered
    2 tablespoons lemon juice
    1 tablespoon lemon zest
    2 tablespoons butter

    Directions

    Heat the olive oil in a skillet over medium heat. Lightly coat the scallops in flour, and cook 1 to 2 minutes on each side, until lightly brown. Remove the scallops from the skillet, and drain excess oil. Stir in the white wine, scraping up the browned bits from the bottom of the skillet.

    Mix the onion, green bell pepper, and dill into the skillet. Cook and stir for about 2 minutes. Mix in the tomatoes, lemon juice, and lemon zest. Continue cooking about 1 minute, then mix in the butter until melted. Cook and stir until the liquid has reduced by the desired amount. Return the scallops to the skillet, and cook just until heated through.
