  • Recipe For Veal Stew

    Ingredients

    4 tablespoons olive oil
    1 onion, chopped
    2 cloves garlic, minced
    2 pounds veal, trimmed and cubed
    1 (8 ounce) can tomato sauce
    1/2 cup white wine
    salt and pepper to taste

    Directions

    In a large pot, heat oil over medium heat. Add onions and garlic; cook and stir until onion is tender.

    Add meat to the pot, and brown evenly.

    Stir in tomato sauce and white wine. Season with salt and pepper to taste. Bring to a boil, reduce heat to low, cover and simmer for 1 1/2 hours, or until tender.

  • Recipe For Spicy Scallop Fettuccine

    Ingredients

    8 ounces uncooked fettuccine
    2 large carrots, thinly sliced
    1 tablespoon olive or canola oil
    2 cups frozen sugar snap peas
    3 green onions, sliced
    3 garlic cloves, minced
    1 tablespoon butter or stick margarine
    1/2 cup white wine or chicken broth
    1/3 cup water
    2 teaspoons dried tarragon
    1 teaspoon chicken bouillon granules
    1/8 teaspoon cayenne pepper
    1 pound fresh or frozen bay scallops, thawed
    2 tablespoons cornstarch
    2 tablespoons cold water
    1/4 cup shredded Parmesan cheese

    Directions

    Cook fettuccine according to package directions. Meanwhile, in a large nonstick skillet, saute carrots in oil for 4 minutes. Add the peas, onions and garlic; saute 3 minutes longer or until carrots are tender. Remove vegetables and keep warm. Drain fettuccine and toss with butter; keep warm.

    In the skillet, combine wine or broth, water, tarragon, bouillon and cayenne. Bring to a boil; add scallops. Reduce heat; simmer, uncovered, for 1 minute. Combine cornstarch and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until sauce is thickened and scallops are opaque. Add pasta and vegetables; heat through. Sprinkle with Parmesan.

  • Dilled Shrimp (Rejer)

    Ingredients

    2 quarts water
    1/4 cup coarse salt
    1/3 cup white sugar
    5 sprigs dill
    2 pounds medium shrimp, with shells

    2 tablespoons vegetable oil
    1 tablespoon white wine vinegar
    1 tablespoon minced dill
    1/4 teaspoon salt
    1/4 teaspoon pepper

    Directions

    Bring water to a boil in a large pot over high heat. Add salt, sugar, and dill sprigs; stir until sugar has dissolved. Pour in shrimp and cook until the shells turn pink, and the meat is no longer translucent, 3 to 4 minutes. Strain the shrimp through a colander, discard dill sprigs, and chill until cold in the refrigerator, about 30 minutes.

    Once shrimp have cooled, peel and devein them; discard the shells. Whisk together oil, vinegar, minced dill, salt, and pepper; toss with shrimp meat to coat. Cover, and chill overnight in the refrigerator; serve with sprigs of fresh dill.

  • Recipe For Classic Ketchup

    Ingredients

    6 large tomatoes, quartered
    1 bulb fennel, chopped
    1 yellow onion, chopped
    4 cloves garlic
    1/4 cup SPLENDA?(r) No Calorie Sweetener, Granulated
    1/4 cup molasses
    1/4 cup red wine vinegar
    10 whole cloves
    2 whole star anise pods
    1 tablespoon salt

    Directions

    In a large saucepan combine tomatoes, fennel, onion, garlic, SPLENDA?(r) Granulated Sweetener, molasses, vinegar, cloves, anise pods and salt. Reduce over low heat until mixture becomes very thick.

    Puree mixture in a blender and strain through a mesh strainer. Chill and store in refrigerator.
