  • Apricot-Ginger Asparagus

    Ingredients

    1/2 pound fresh asparagus, trimmed
    1/4 cup apricot preserves
    1 tablespoon red wine vinegar or cider vinegar
    1/8 teaspoon ground cinnamon
    1 pinch ground ginger

    Directions

    In a large skillet, bring 1 in. of water to a boil; place asparagus in a steamer basket over water. Cover and steam for 5 minutes or until crisp-tender; drain and keep warm.

    In a small skillet over medium heat, bring the preserves, vinegar, cinnamon and ginger to a boil. Reduce heat; simmer, uncovered, for 2-4 minutes or until glaze begins to thicken. Pour over asparagus.

  • Recipe For Deluxe Garlic Ribs

    Ingredients

    6 1/2 pounds pork baby back ribs
    1 teaspoon dried thyme
    2 teaspoons dried oregano
    2 teaspoons garlic powder
    2 tablespoons salt
    1 tablespoon ground black pepper

    1 teaspoon dry mustard
    2 tablespoons Worcestershire sauce
    2 tablespoons soy sauce
    2 tablespoons distilled white vinegar
    1/2 cup steak sauce
    3 tablespoons white wine
    2 cloves crushed garlic
    2 teaspoons ground black pepper
    8 tablespoons plum sauce
    1 (12 ounce) jar honey
    3 tablespoons molasses

    Directions

    Place ribs in a large pot, cover with water and add thyme, oregano, garlic powder, salt and pepper. Bring to a boil and simmer for 40 minutes.

    Remove from heat and either let stand until ready to barbecue or cook immediately.

    Meanwhile, mix together the sauce ingredients and blend well. Remove ribs from liquid and brush both sides with the sauce.

    If possible barbecue the ribs 6 to 8 inches from the coals for 15-20 minutes or until brown and crisp. Basting frequently. Serve with remaining sauce.

  • How To Make Butt Stompin’ Barbeque Sauce

    Ingredients

    2 tablespoons butter
    1 small onion, minced
    1 clove garlic, minced
    3 tablespoons red wine vinegar
    1 cup chili sauce
    1 cup pineapple juice
    1/2 cup crushed pineapple
    1/4 cup brown sugar
    2 tablespoons lemon juice
    2 tablespoons Worcestershire sauce
    2 teaspoons dry mustard
    1 pinch pepper
    2 tablespoons hot pepper sauce
    1 habanero pepper, seeded and chopped
    1/2 cup bourbon whiskey

    Directions

    Melt butter in a large saucepan over medium heat. Add onions, and saute until they are transparent. Stir in the garlic, wine vinegar, chili sauce, pineapple juice, pineapple, brown sugar, and lemon juice. Season with Worcestershire sauce, dry mustard, pepper, hot pepper sauce, and habanero pepper. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes.

    Stir in the bourbon, and simmer for an additional 10 minutes. Store in the refrigerator.

  • Recipe For Roasted Asparagus with Shallots

    Ingredients

    2 bunches fresh asparagus spears, trimmed
    4 medium shallots, thinly sliced
    4 tablespoons extra-virgin olive oil
    3 tablespoons red wine vinegar, divided
    salt and pepper to taste

    Directions

    Preheat the oven to 400 degrees F (200 degrees C).

    Place the asparagus and shallots in a large bowl, and pour the olive oil and 2 tablespoons of the vinegar over them. Season with salt and pepper, and toss to coat evenly. Spread the asparagus spears out in a single layer on a baking sheet.

    Bake for 20 minutes in the preheated oven, or until tender and bright green. Shake the pan about half way through to roll the spears over so they cook evenly. Remove from the oven, and drizzle the remaining vinegar over the asparagus. Toss lightly to coat, and serve immediately.
