  • Apple Port Pastry Cups Recipe

    Ingredients

    1/2 (17.3 ounce) package Pepperidge Farm?(r) Puff Pastry Sheets
    4 ounces mascarpone cheese, softened
    4 teaspoons packed brown sugar
    1 tablespoon port wine
    1/2 teaspoon ground cinnamon
    2 teaspoons lemon juice
    1 red or green apple, cored and finely chopped

    Directions

    Thaw the pastry sheet at room temperature for 40 minutes or until easy to handle. Heat the oven to 400 degrees F.

    Unfold the pastry sheet on a lightly floured surface and roll into a 14-inch square. Cut the pastry sheet into 36 (about 2 1/4-inch) squares. Press the pastry squares into 36 (1 3/4-inch) mini muffin pan cups.

    Bake for 10 minutes or until the pastry cups are golden.

    Stir the cheese, brown sugar, wine, cinnamon and lemon juice in a medium bowl until the mixture is smooth. Add the apples and toss to coat.

    Divide the apple mixture among the pastry cups. Bake for 10 minutes or until the filling is hot.

  • How To Make Caramelized Brussels Sprouts with Pistachios

    Ingredients

    4 pounds Brussels sprouts
    1/2 cup unsalted butter
    4 small red onions, cut into strips
    1/4 cup red wine vinegar
    2 tablespoons white sugar
    salt and pepper to taste
    1/2 cup coarsely chopped pistachios

    Directions

    Place Brussels sprouts in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until Brussels sprouts are tender yet crisp.

    Melt the butter in a deep skillet, add the onions and 3 tablespoons vinegar; cook until onions brown.

    Add the Brussels sprouts, sugar and remaining vinegar. Saute over medium heat until the Brussels sprouts are lightly caramelized.

    Season with salt and pepper to taste and garnish with pistachios.

  • Recipe For Emily’s Famous Roasted Vegetable Salad

    Ingredients

    1 eggplant – quartered lengthwise, and sliced into 1/2 inch pieces
    2 small yellow squash, halved lengthwise and sliced
    4 cloves garlic, peeled
    1/4 cup olive oil, or as needed
    1 red bell pepper, seeded and sliced into strips
    1 bunch fresh asparagus, trimmed and cut into 2 inch pieces
    1/2 red onion, sliced

    1/4 cup red wine vinegar
    2 tablespoons balsamic vinegar
    1/4 cup olive oil
    2 lemons, juiced
    1/4 cup chopped fresh parsley
    3 tablespoons chopped fresh oregano
    salt and freshly ground black pepper to taste

    Directions

    Preheat the oven to 450 degrees F (230 degrees C). Grease a large baking sheet.

    Spread the eggplant and squash slices out in an even layer on the prepared baking sheet. Place the cloves of garlic off to one side of the pan, so you can find them later. Bake for 15 minutes in the preheated oven

    While the vegetables roast, whisk together the red wine vinegar, balsamic vinegar, olive oil, and lemon juice in a large serving bowl. Season with oregano, parsley, salt and pepper. Remove the garlic cloves from the oven, and chop or mash. Whisk the garlic into the dressing. Set aside.

    Remove the vegetables from the oven, and stir the squash and eggplant. Layer the asparagus, red onion, and red bell pepper over the top of the eggplant and squash. Return to the oven, and bake for another 15 to 20 minutes, or until the asparagus is tender but still bright green.

    When the vegetables are cooked through and slightly toasted, remove them from the oven, and place them in the bowl with the dressing. Stir to coat evenly. Taste and adjust salt and pepper if necessary. Chill for a few hours to marinate the vegetables.

  • How To Make Astoria Crab Pasta

    Ingredients

    1/3 cup butter
    1/4 cup Champagne or other sparkling white wine
    1 clove garlic, minced
    1/8 teaspoon paprika
    1/8 teaspoon dried sage
    1 pinch ground ginger
    8 ounces cooked crabmeat
    1 (8 ounce) package uncooked angel hair pasta
    1 tablespoon extra-virgin olive oil, or as needed
    salt and black pepper to taste
    1 tablespoon chopped Italian flat leaf parsley, divided

    Directions

    Melt the butter in a heavy skillet over medium-low heat, turn the heat to low, and cook for about 5 minutes, straining off any milk solids, until the butter is caramel brown in color. Pour in the wine, garlic, paprika, sage, and ground ginger, and cook and stir about 5 minutes, until the sauce has reduced and the garlic is barely golden. Lightly fold in the crab.

    Bring a pan of lightly salted water to a boil over medium heat, and drop in the pasta. Cook until just tender, about 4 minutes, and drain.

    Place the pasta on serving plates, and drizzle each serving with olive oil. Spoon the butter-crab sauce over each plate, sprinkle with salt and pepper to taste, garnish with parsley, and serve immediately.
