  • Recipe For Succulent Grilled Hickory Pork Chops

    Ingredients

    2 boneless pork chops
    1/2 cup white wine
    3 tablespoons olive oil
    1 tablespoon lemon juice
    1 clove garlic, crushed
    1/2 teaspoon dried sage
    2 teaspoons dried parsley
    Pepper, to taste
    Hickory wood chips

    Directions

    Mix wine, oil, lemon juice, garlic, sage, parsley, and pepper in a small bowl. Place pork chops in a plastic bag or shallow dish and cover with marinade. Refrigerate the pork, covered, for 2 to 4 hours.

    Meanwhile, soak the hickory chips in a bowl of water for at least 30 minutes.

    Preheat an outdoor grill for high heat and lightly oil grate. Put the soaked hickory chips over the coals.

    Cook the pork chops on the grill for 10 to 15 minutes, or until desired doneness is achieved. For best results, cover the grill while cooking so that the meat is infused with the smoke flavor.

    Ingredients

    3 egg yolks
    2 tablespoons white sugar
    2 tablespoons white wine vinegar
    1 tablespoon butter
    salt to taste

    1 cup heavy cream
    2 cups pitted white cherries
    2 cups quartered marshmallows
    2 large orange, peeled, sectioned, and cut into bite-size
    2 cups pineapple tidbits, juice reserved

    Directions

    In a double boiler, combine the egg yolks, sugar, vinegar, butter, salt, and reserved juice from the pineapple tidbits. Cook and stir constantly until thick. Remove from heat, set aside to cool.

    In a large mixing bowl, beat cream until soft peaks form.

    Fold the whipped cream, cherries, marshmallows, pineapple and oranges into egg yolk mixture. Chill for 24 hours. Garnish top with extra chopped oranges and maraschino cherries if desired.

    Ingredients

    1/4 cup blue cheese, crumbled
    1 cup vegetable oil
    2 tablespoons lemon juice
    1/4 cup white wine vinegar
    2 cloves garlic, minced
    2 teaspoons seasoning salt
    1 teaspoon white sugar
    1/2 teaspoon dry mustard
    hot sauce to taste
    2 cups fresh mushrooms, stems removed

    Directions

    In a medium bowl, mix together the blue cheese, vegetable oil, lemon juice, white wine vinegar, garlic, seasoning salt, white sugar, dry mustard and hot sauce. Stir in the mushrooms. Cover and refrigerate 4 to 6 hours before serving.

  • Grilled Chicken and Artichoke Soup Recipe

    Ingredients

    1 ounce dried porcini mushrooms
    1 cup boiling water
    1 pound skinless, boneless chicken breast halves
    salt and pepper to taste
    6 cups chicken broth
    1/2 cup sun-dried tomatoes (not packed in oil), snipped into small pieces
    2 tablespoons tomato paste
    1/3 cup olive oil
    2 cloves cloves garlic, minced
    1 red onion, minced
    2 (13.75 ounce) cans artichoke bottoms, drained and chopped
    1/4 teaspoon black pepper
    1/2 cup chopped fresh parsley
    2 tablespoons fresh lemon juice
    1/2 cup dry white wine
    1/2 cup grated Parmesan cheese, or to taste

    Directions

    Place the dried mushrooms into the boiling water and set aside until softened, about 20 minutes. Once softened, squeeze excess water from mushrooms and finely chop. Reserve the mushroom-flavored water.

    Preheat an outdoor grill for medium-high heat and lightly oil grate.

    Season chicken breasts with salt and pepper. Grill chicken breasts until no longer pink in the center, about 6 minutes per side. Once cooked, set aside.

    Pour chicken broth into a large pot, and bring to a boil over high heat. Stir in sun-dried tomatoes, tomato paste, and reserved mushroom liquid. Reduce heat to medium-low, and simmer for 15 minutes.

    Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 5 minutes. Stir in the chopped mushrooms, artichokes, pepper, parsley, lemon juice, and white wine. Bring to a boil over high heat, then reduce heat and simmer 10 minutes; add to the simmering chicken broth.

    Slice the grilled chicken breasts into strips and stir into the simmering soup. Sprinkle with Parmesan cheese before serving.
